    I will post my food today as I have been good!

    Breakfast - Big bowl of yogurt and tinned peaches.
    Lunch - cream of tomato soup and a piece of MIL's cake.
    Dinner - Roast chicken, roast parsnips, broccoli, cheesey leeks and yorkshire puds with HM gravy... mmm can't wait!)

    Littlemoog - enjoy the yummy food while you're not feeling too sick to eat it, no one will begrudge you :)

    Can i ask a question please.

    I have various disabilities which make cooking difficult. I wonder if anyone else is in the same situation and could suggest some food alternatives.

    It certainly feels good to be good doesn't it. :j

    However I have not been so good today. Started off okay, but by this afternoon it went down hill rapidly. I decided to make some icecream. Big mistake! There was too much to go into the tub for the freezer but not enough to fill another tub, so what does one do in such circumstances?? Yes, you guessed right, eat it! Currently feeling a bit sick and very full.

    Todays food

    B- rice cereal, with fruit

    D- Lamb curry with cauliflower, no rice.

    T- Ham salad, couple of crispbread

    Snacks, Apple, pear and loads of icecream and left over dark chocolate from making ice cream. :eek:

    Depends on whether you have help or not. When my husband is around he batch cooks meals for the freezer which I re-heat. Simple meals such as soups, bolognaise, chilli. When he is busy I often buy ready meals from Wiltshire Foods as they are very good quality.

    I have lost weight by eating three meals a day and no snacking - although recently it has reared it's ugly head and I intend to get control again. I use less calories than an able bodied person as I am less active and that is the crux so need to eat significantly less to lose weight. I would maybe suggest keeping an honest food diary and adding up the calories and then you will get an idea of what you can cut back on.

    Thankyou molly, I don't use many calories. I do have a carer so i will ask her to help me.

    Hi Magical,

    my only limitations are to do with fatigue, which is very unpredictable, and just now I can't lift anything heavy. I used to help my MIL work around various disabilities. Are you able to post a wee bit about your limitations so folks here can come up with suggestions? They're all very clever at creative solutions.

    Meanwhile a few suggestions to start:

    - look at your kitchen equipment. Does it work for you? Can you replace anything that's too heavy? Make sure knives are sharp - blunt ones take more energy to use (and are more likely to slip)

    - investigate brands aimed at those of us with physical challenges eg: I find some of the Good Grips utensils very good

    - if you have good days and bad days try to make ahead on the good days

    - look at easy swaps on ingredients. eg: on a bad day I find it easier to have couscous instead of rice, and instant polenta mixed with cheese is great instead of mashed potatoes - again super-quick to make too. I like this one which you can find in lots of supermarkets:

    Just checking the link there's lots of other things you can make with it - I'll need to experiment some more.

    - plan some meals that are just "assembly jobs" - eg: lunch with salad leaves, baby tomatoes, cold sliced meat, olives

    - look at alternative packaging and see what's easier - are jars easier than tins for you to open, or vice versa, are you better getting some things in vacuum packs instead eg: beetroot Then you can choose to open them with scissors or a knife.

    I suffer with exhaustion after any simple task, i also have mobility problems, but i can use a perching stool.

    I think i am quite a fussy eater as i dont really like salad. I will have it in a sandwich or vegatables mixed in with food. I eat like a child haha.

    My main problem is my sweet tooth so i hope writing what i eat on here will help.

    I also get very muddled with recipes and get in abit of a mess.

    Hi Magical :) I also suffer with exhaustion and have days when I find breathing difficult so use the nebuliser a lot. Other times I need to sleep for a day. Like Rosetta I can only suggest batch cooking (I use a slow cooker, my most invaluable piece of equipment) and portion freezing. If your carer can help you fill the sc one day and leave it on overnight she can freeze it the following day. I don't use a recipe as such, just add whatever veg/pulses I have to hand with a chicken or other meat, then maybe a teasp of chilli, or tomato puree, curry - anything to give different flavours. I'm not a rice lover so have it with a naan or pitta bread which you can store in the freezer.

    I've not had Wiltshire foods personally but have only ever heard good of them.

    I don't have a particularly sweet tooth but have plain ff yogurt over fruit, or porridge with dried fruit and cinnamon (as recommended on this thread :)), fruit'n'fibre breakfast cereal which doesn't need sugar, and a favourite for when I have visitors - a meringue nest, a dollop of sorbet (raspberry is my fav), a dollop of low fat ice cream and cover with plain yogurt. You can add fruit puree, nuts and/or a little grated chocolate to top it off. Delicious and almost fat free. hth a little bit

    Our last day in Rome today :( so will be airport food tomorrow then down to serious stuff on Wednesday, shopping for the next challenge. I'm quite looking forward to it! Good luck everyone

    Back to work today :(. Not looking forward to it, can you tell? :o

    Ah well, plan for today is -

    Brekkie - hm muesli
    Lunch - hm chorizo, garlic and potato soup & hm bread
    Dinner - Sunday lunch (roast chicken & veges)

    Exercise - unlikely as it's probably going to be too wet to walk at lunchime, and I'm expecting to have too much work....:(

    Treats - no exercise....no treats (my new rule for this challenge) :(

    Gosh, how unsmiley am I this morning? Trying again....:( nope :o nope :cool: nope :) that's better :T

    Morning all, back to work for me too. It's been so lovely to have the long weekend at home. :)

    I've started using myfitnesspal on my laptop and I love it! It's so much easier and quicker to use than any of the other calorie counting websites I've tried. :T

    Today:
    B: porridge with blueberries
    L: SC veggie soup I made yesterday, a bit of cheese.
    D: Soup with some sort of beans added to it.
    S: shared brunch at work, so probably cake or similar

    Exercise: walk x2, lots of housework after work.
