Sorry was away entering the Daily Mail competition for a country cottage:D. I left mine in for just over 2 1/2 hours in a fan oven. The centre is cooked ok, my tin is slightly wider than suggested so not quite as deep. Looks ok, as they say the proof of the pudding is in the eating so we shall see.If it wasn't for blinds it'd be curtains for all of us:dance:0 -

Just to say, don't worry about opening the oven on a fruit cake. Nothing will happen. If you think it's nearly cooked, stick a skewer (or knife) through the middle, and if no mix comes out stuck to the skewer, it's done. Well actually, if you're under the time she states, I would give it another 10 mins once you have the clean skewer. If you are around the right time, then take it out and it will be fine. trust me, I'm a cake expert :-)0 -

Same as me, Everyones under strict instructions not to touch the oven and all I keep saying is I don't know what it'll be like!
