Have you thought about vintage/secondhand wedding rings? You can get some really pretty designs (for the ladies!) and something a bit different from the norm.
For men, you might like to consider titanium: very strong, masculine looking and reasonably priced.
Another idea is to part-exchange some "unwanted" jewellery. Many people don't want yellow metal anymore and if you're taking something in part-ex. the jeweller may allow you a bit more than just scrap.
