    I freeze apple puree also to use throughout the winter,it doesn't matter whether they are cookers or eaters.
  • Hello abbecer

    I had a similar challenge on my hands the other night and found a nice apple & cinnmon jam. Tried and tested, here comes the recipe...

    * 7 cups Apples (Peeled & Cored)
    * 6 cups Sugar
    * 1/4 cup Lemon Juice
    * 1 tsp Cinnamon

    How To Make

    1. Before you start, make sure that all the apples have been thoroughly washed, peeled and cored.
    2. Slice up the apples finely and place in a large saucepan over a high heat.
    3. Add the sugar, lemon juice and cinnamon while stirring continuously.
    4. Let the mixture boil for about half an hour until thickened, removing any scum that may rise to the surface.
    5. Pour the mixture into jam jars, seal and store away.

    HTH ;-)

    I make apple sauce ready to eat with Christmas/Boxing day meats. Nothing like being prepared.

    I have a Jack juicer, and didn't realise you could freeze apple juice. What do you decant it into to freeze it? Thanks

    Had this recipe in my organic box from Flights Orchard Organics yesterday:

    American One-crust pie with spiced apples and raisins:

    Shortcrust pastry:

    8oz plain flour
    2oz lard at room temp
    2oz butter or marg
    cold water

    Glaze
    1 small egg separated
    6 demerara sugar cubes, crushed

    Filling
    1lb bramley apples, peeled, cored and sliced
    1/2 lb any eating apples
    1/4 tsp ground cloves
    1 level tsp ground cinnamon
    3oz raisins
    1/4 whole nutmeg, grated
    2oz soft brown sugar

    Make pastry, sift flour rub in the fats, then put enough cold water in to bring together. Knead lightly then rest in fridge for 30 mins.

    pre-heat oven to 200c, prepare apples mix filling ingredients together.

    roll out pastry to round of 14 inches in diameter and transfer to greased baking tray.

    to prevent soggy pasry from the juice of the apples, paint it with egg yolk over a rouglhly a 10inch inner circle.

    Pile filling ingredients into the centre of the pastry, then turn in the edges. Brush pastry surface all around with egg white, then crush the sugar cubes and sprinkle over the pastry.

    Put in oven on highest shelf for 35mins, or until crust turns golden brown.

    No doubt like everyone else with an apple tree in their garden, I am a bit overwhelmed with apples at the moment. My family and friends are getting a bit sick of me asking if they'd like a bag. I have made all the usual;apple pie, blackberry and apple, apple cake, apple crumble, baked apple.

    I just wondered if anyone had any other recipes or ways of using them up. I know that if they just fall to the ground and rot they are helping the soil, but it still seems a waste.

    Give them all to meeeeee!

    I'm currently relying on my in laws to provide me with apples! The only thing I haven't seen on your list is stewed apple - I make a big bowl of this and keep it in the fridge. I add a dollop to my weetabix/porridge, a few spoonfulls to parsnip soup or mix it into some plain yoghurt.

    Have you thought about making an apple chutney? Or apple sauce to have with pork?
  • I know that one of my ladies at playschool is making cider with her many apples but no idea how? All i know is it involves alot of crushing!! :confused:
