We have an apple tree in the back garden - I think they are golden delicious. A couple of weeks ago it was quite windy here, and I came back to find all the apples had blown off the tree. Not all of them were ripe. I partly stewed them and have frozen them for pies later on. Because they were still a little unripe and slightly tart I added some sugar. I have already used one batch in a pie and they were fine. I know eating apples are supposed to be not good for cooking, but not every country actually grows cooking apples. We are just lucky. In South Africa Granny Smiths are recommended for cooking.0

There's some apple trees in my local dene which are positively spilling over with apples ripe for the picking at the minute and I hate seeing them go to waste.
Does anyone have any ideas for how I can use them, ideally ways to preserve them or make things which I can freeze/hand out to friends & family.
I've already peeled, cored & stewed a load which are now in the freezer but I'm stuck for ideas other than apple pies & crumbles.
Recipes much appreciated!!

Peel and core (either or both fruit) and put in the bottom of an ovenproof dish, sprinkle on sugar and spices of your choice.
Make up a standard sponge batter (2oz each sugar, butter, flour per egg) and spoon over the fruit, bake at 170 degrees or so until risen.
Serve hot with cream, icecream or custard but leave some for a fridge snack at midnight.
Options - make a chocolate sponge for the pears, add zest to sponge, add vanilla to sponge, add sultanas to apples - have fun!0 -
