  • Helloooo, I've spent a lovely couple of hours sitting in the garden reading cookery books in preparation for menu planning :T

    Did a tactical shop in W@itrose and combining vouchers and discounts etc saved almost £40 :T

    I may have bought 6 chickens (3/£10) (apologies too all readers who buy chucks who have walked the fields :o) - 2 are in the freezer whole, 1 is spatch cocked, all wings are marinated in piri piri sauce and wrapped, the legs are in a smoky BBQ sauce, the breasts are cut in half and bagged into enough for three meals. All now in the freezer.

    Remaining chicken carcasses have been turned into stock and left to cool, will remove the fat tomorrow then bag/freeze. Finally, the chicken bits from the stock will make a chicken pie for Monday night :T

    It's been pretty hot whilst we were away and we didn't fancy much cooking so are in catch up now. Good to have Mr T in the kitchen. Yesterday he made roast garlic and chilli focaccia plus, using an old mix I had in the cupboard :o, a roasted tomato ciabatta :D

    Washing dried on the line and NO ironing :T

    HM scones from the freezer for afternoon tea with HM apricot jam, thanks to an MSE chum :T

    Finally, SW pulled pork with salad for dinner this evening :T

    Back to chilling with cookery books now.

    I've just finished your diary (after a couple of weeks) & just wanted to de-lurk to say hope Mr T gets some good news soon, fingers crossed. Your diary is really inspirational & I have now sorted my freezer, done more batch cooking and am gonna try making bread tomorrow - so thank you :)

    I've truly had a fantastic day. The kids are making cakes at the moment as we have friends coming for afternoon tea.

    I may sound a bit mad with my monthly menu plan but I find coming home from work and having to decide what to make is too frustrating and I'm tired by then. Lets just call me eccentric :rotfl:
