I love seitan Moguline!
Since discovering boiling and/or steaming it, the texture is always perfect now so I make it regularly!
We haven't eaten as much as expected this week so I still have a few of the lemon potates left (I've put the 'soup' in the freezer) a little bit of the red cabbage and the black beans. I'm going to make burgers with the remains of the red cabbage and some of the black beans and serve with the remaining potatoes tonight - I'll make the enchiladas with the rest of the black beans and freeze them for next week
I'm going to be out for much of the weekend so will be doing mainly freezer meals next week as won't have time to cook...two nights are covered with the enchiladas and soup and I'm pretty sure that I have a lentil curry stashed in there somewhere!! Hopefully that means I will have a spend free week!!:j0 -
We've eaten more this week than normal which means I'm cooking again tonight! :rotfl:
I've got some filo pastry out of the freezer and have found a jar of roasted peppers with a few left in it in the fridge so will make a filo tart.
I'm going to put pesto on the base and top it with the peppers, black olives, cherry tomatoes and vegan 'feta'. There will be enough filo to make a large tart and leave some left over so I'm going to make some individual onion jam tarts too
I've found quarter of a head of broccoli in the fridge too so I'll steam that and add some seed paste - I still have carrots too so will add them to the steamer and dress with maple and dijon0 -

Menu planning this weekend - we seem to be eating lot more than usual (well, I am!;)) so I really need to plan a bit more, especially as I am intending to spend as little as possible...
I'm going to make vegan sushi and inari at the weekend - it's been a while since I have had it and I'm starting to have cravings. I'll have to buy avocado to go into it but I need to go to the shop tomorrow to get some 'living' salad so will do the menu plan before I leave so that I can get any other fruit and veg that I need.
Tonight I'm making corn, coconut and lime soup - dh has been plaguing me for the last few weeks about it so its going to be my Friday night treat for him! :rotfl:0 -
Been living on leftovers most of the week!
I'd made a squash and aduki bean saute which I served with buckwheat and a coriander dressing and some spicy cauliflower at the weekend - had some saute, cauliflower and dressing left over. I'd also made some pizza's with wraps as a base. Had a bit of everything left (other than buckwheat) so heated a wrap in a frying pan, brushed the top with a little oil, turned it and spread the remaining dressing on it then squished the remaining saute and spread that on top, added the remaining cauliflower, sprinkled it with some vegan greek style cheese, popped another wrap on top and left it to cook for a few minutes. I brushed the top wrap with a little oil then turned it over and cooked for a few more minutes....lush!!:D then i used the remaining pizza stuff to make a pasta sauce ...I love getting several meals out of leftovers!! :j

Had cabbage, red beans and rice this week - realised I had no risotto rice so used sushi rice instead...it worked well!! I also found a recipe for 'ham' style seitan and decided to try it as I had some pineapple left over from the pizzas...suffice to say that I won't be trying that again_pale_:rotfl:
Still got quite a bit of it though so I'm going to mooch in the cupboards today to see what I can find to make it more palatable- it may just end up being a curry!0 -
I'm so behind on this thread! Squirrelgirl uour recipes sound DELISH. I'm going to try those tarts!
I must admit, veganism has fallen by the wayside a bit for meI also caved and had meat two weeks ago because I had been craving for weeks. Glad I did though because it tasted disgusting and made me feel nauseous! Definitely sticking to vegetarianism at least and cutting down on eggs. I don't really have any dairy.
Does anyone have any tips for a ridiculously easy vegan meal plan please? I'm exercising quite a lot at the moment so need sufficient protein and I don't think I am getting enough.0 -
Anything with pulses is easy - Brown rice or quinoa with either a black bean chilli or tarka dhal has lots of protein, is cheap and easy to make in bulk.
Also, you'd be surprised how little protein we actually need. It's a lot less than a lot of protein shake companies would have you believe.
You could also add more nuts and seeds to things to up it a bit, or snack on apple slices with peanut butter.
I also buy cheap tofu from the Chinese supermarket and find having it scrambled is the easiest way to prepare it.0 -
We started using up everything this week.
So far, meals have included:
LM sausages and bulgar wheat veg mix (frozen from Lidl)
Lentil and pak choi curry - using pak choi from last year's growing and half a jar of curry paste from fridge
LM sausages (again), mash, beans and veg. Mash was from freezer
Coconut and butternut squash curry and rice (both from freezer)
Still to use:
2 X veg soup
2 X Asian very soup
2 X s. pot curry
one small pot pak choi
Small pot red wine
one tiny portion of beans
1/4 pot hummus
2 X red thai curry
4 black bananas - assuming I can still make banana bread with ones that blackened in freezer?!
Brown lentils with coconut (lidl)
Tonight I also mad 'crazy eggless chocolate cake':
1.5 cups white flour
1 cup sugar
1 tsp baking powder
1/2 tsp salt
3 tbsp cocoa powder
1 tbsp vinegar/lemon juice
1 cup water
1/3 cup oil
Bake at 160 for 40 mins.
It it lush...sprinkled flaked almonds on top.0
