  • It's been mental over the past few weeks!!:eek:

    However, back on the straight and narrow again now - had lemon baked cauliflower, thyme and mint dressed buckwheat, millet and quinoa, spinach leaves and a grape, blueberry and clementine salad last night.

    Tonight we're having chargrilled sweet potato with red onion steaks, leaves and a sweetcorn and pineapple salsa.

    I've made a meal plan but I'm generally cooking every other day - we don't eat regularly enough to warrant cooking daily and I am going to do everything I can to minimise waste :D

    I'm making bread tomorrow and we'll use up the Moroccan lemon soup tomorrow night or sunday lunchtime. I'm doing a bloomed wild rice salad for Sunday evening - any leftovers we have can be eaten with that. :D

    I am joining this thread because I have a lot of ingredients that have been lurking in my cupboard for a while that I need a reminder to use (looking at you, tinned pumpkin!)

    Tonight we are having stir fry: brown rice, a packet of black bean sauce, some frozen stir fry veg and probably a tin of chickpeas. Not eaten yet as OH is having a late one at work :eek:

    So yesterday I made a miso broth with udon noodles and we had fridge 'ramen' ;) we put in the leftover sweet potato; a couple of spoons of leftover grains; spinach, apple, walnut & date salad; sweetcorn and pineapple salsa; shredded carrots and some shredded courgette. Really random and absolutely lovely! :D

    Tonight we're having pasta in a creamy porcini sauce with salad of some description....I didn't get round to making the bread the other day so we will have the morroccan lemon & potato soup tomorrow from the freezer with hm foccacia :T
  • It's been a while! :o
    The last few months have been slightly crazy so I've not been great with food :o however, got to get back on track now so will be having a big cook-in at the weekend ;)

    I've got plenty of pasta flour so will be making rainbow ravioli and pasta shapes :D I'm also going to cook loads of chickpeas and freeze some ready for use over the next couple of weeks...I don't want to make too much for the freezer as I'm planning on clearing them ready for the autumn/winter when I tend to batch cook more often so hopefully we'll eat our way through them soonish!!
  • I think I'll be on here a lot over the next 8 weeks ;) I'm in a 'spend nothing other than absolute essentials!' phase which means keeping away from the shops and using what I have in a creative manner :D
    I have a bean casserole and some lemon potatoes in the freezer- I'll have those over the weekend. I have a lasagne in there too so that will sort dh & my grandbaby on Monday. I'm going to spend the rest of the week using up any odds and ends that I have in the freezer ready to defrost it next weekend :j It's mental at the moment and I hate it when it's like that :(
    I haven't made the pasta yet so that's a job for tomorrow ;) Stuffing wise, I've got vegan feta, black olives, sundried tomatoes, vegan pesto, cream, a variety of pulses and tins of tomatoes. I can raid the garden for sage, thyme, basil, rosemary and mint (chocolate and regular- both a bit sparse at the moment though:( ) and have lemons, vegan butter and a variety of oils.
    I've got enough flour to make breads, pastry etc but will buy some living lettuce as I'm all out of salads at the moment. I am setting myself a £10 per week budget for the essentials but that will cover everything- if we don't have it, we'll be doing without! ;)

    I'll try and post more regularly as well, I've got mat leave coming up in 2 months so every little bit of saving counts right now!
