  • Congratulations Moguline!!! :D new babies are lush but the sleep deprivation can certainly derail plans (worth it though!! :happyhear) I did a lot of batch cooking for dd ready for when my grandbaby arrived and she found it a real help!

    I totally agree with everyone that it's sooo much easier being vegan these days...when I first went vegan (was talking to dh the other day and we think it was over 20 years ago!! ) I had no choice other than to cook from scratch and absolutely no chance of eating out! :rotfl: These days, eating out is incredibly simple and although I still don't buy convenience food very often, it's nice to have the choice ;)

    Having enchilada 'pie' tonight - I have defrosted my squash and aduki bean saute and have some tortillas open - bit of salsa and vegan cheese on top of the layers and into the oven for 20mins or so and it's all done ;) I'll be serving it with a carrot and orange salad and a cucumber and chocolate mint salad to use up what's hanging around still :D
  • At thank you squirrelgirl! I had about 6 weeks worth of meals in the freezer with my first and it was such a big help in the early stages!

  • I was bored yesterday afternoon so I looked through my cupboard and made a lentil dal with onion, peas, carrots, and yellow pepper. I used Marigold bouillon, curry powder, tikka seasoning and garam masala as well as lots of black pepper. I put in some rinsed rice towards the end to thicken it up. I will have that with some mango chutney and some (shop bought) onion bhajis for dinner tonight.:)

    Been reading this thread and trying to catch up with all the lovely recipes - will definately be making a note of some of them! Me and DH have been vegan for 2.5 years now, although I've fallen off the wagon a bit since being pregnant. I mainly still have vegan dinnertime meals as I like to stick to cooking one thing on an evening.

    Would love to join in as our cupboards are chocka and I still do a full weeks shop every Friday night ... :o

    My friend sent me a link to an article the other day saying about how the supermarkets are in fierce competition to attract so called flexitarians who are very interested in vegan products. Good for people like us anyway.:T

    While I can see a big increase in the dedicated vegan fayre (although Mrs Un is now addicted to ready meals) - I'm seeing a bit of a drop off in stuff that was once accidentally vegan, but now isn't due to the needless addition of milk powder. Waitrose essential mince being the latest very disappointing example

    Why am I in this handcart and where are we going ?
  • Hello everyone, we are moving house soon so having a last minute push to use things up out of the freezer and cupboard.
    Had pumpkin and sage risotto on Halloween using a tin of pumpkin puree I bought for some unknown reason about 3 years ago :eek:
    Breakfast today was hm potato cakes using tinned potatoes, vegan spread and a bit of flour. Dough was very sticky and not sure if that was due to tinned potatoes being slightly different. Lunch is going to be butternut soup out of the freezer and if we have a late lunch/I get my bum in gear then will have hm bread with it.
    Tomorrow we are going to eat up a whole 50 piece Indian snack selection out of the freezer... there’s only me and OH :rotfl:

    I know how you feel un..drives me insane when they start adding ingredients that are obviously unnecessary as they weren't in there before! :mad:
    Wednesday...the daal sounds lovely! :D

    Having leftovers today....I'm in a lazy day mood and don't want to waste the lo's so will just eat as they are rather than do a 'recreate' as I normally do ;)
    Cooking day tomorrow- I'm going to make seitan and have a 'roast dinner '- it's been a considerable time since I've had one and I have some veg to use up :D
    I'll probably do two loads of seitan - one 'chicken' style and one 'beef'. That way I can make chilli ginger seitan with noodles on Monday, a seitan and black chickpea casserole with sage potatoes on Tuesday, and lemon seitan with lemon thyme buckwheat on Wednesday. Thursday will be a Buddha bowl with the leftovers and then Friday will be something really exotic like beans and chips! :D:rotfl:
  • Had some of the Indian selection with lunch today as I didn't think we'd want 20 samosas, 20 onion bhajis and 10 pakoras in one day :rotfl:Very nice though and labelled vegan - from Mr M's party range.


    Bread made as well as lemon streusel blueberry muffins from a recipe found on pinterest to use up some blueberries and lemon zest out of the freezer :T Didn't have enough bread flour so found a recipe on Mr S website for one made with plain flour and used a mixture, which turned out better than I expected! Thinking of using up the rest of the assorted frozen berries I have with a tin of apples and making a crumble tomorrow, with some leftover Oatly custard :D
