  • Thanks SL yup, I think I will cook it for myself (once fully defrosted) - it'll do me several days - roast, stock for chicken & leek risotto (my fav dinner just now!) .

This sounds t2818.gif rising, where did you get the recipe? :)

  • Ohhhhh it really is yum Sista

Found it a few months ago in a SM magazine & slightly adapted it to suit my tastes - recipe here https://forums.moneysavingexpert.com/discussion/comment/48018523#Comment_48018523

It's really easy and forgiving! I often chuck all the rice in at once and, as long as you keep an eye on it and keep it topped up with stock, it works just as well.

There's loads of other great recipes on the Grocery Challenge thread https://forums.moneysavingexpert.com/discussion/3956559 HTH :D

  • Well, I can safely say I'm exhausted!

I've cooked all the salvageable meat now (unfortunately the whole chickens didn't make it) as well as loads of veg - trying to figure out how I can fit it all in the fridge as really can't be a***d to bag it all up tonight!

If you are going to make an insurance claim for any lost food you may need to keep it. A friend threw hers away and the insurance company sent out a loss adjuster who turned down the claim because she could not show him what she had lost.

  • Thanks all:) - Mort I did think about claiming on the insurance but had a pretty hefty claim in the last year (storm damage) so decided against it as it's bound to affect future premiums if I claim again so soon. TBH by the time I'd paid the excess, it's probably not really worth it.

    Partial success!

I've just bagged 74 meat & veg portions & 34 meat only ones (and still have the chicken breasts to do!) - they are a bit veg light & meat heavy tho' but there is a limit to how much veg I can chop & cook in one go!

I think every big container I have (not many!) was full to bursting and I literally couldn't cram any more in the fridge.

If I was doing on a "normal basis", I'd have got a lot more portions from the amount of meat there was but at least it wasn't all wasted I guess - and I certainly won't do it again!:o

Just cleaned the freezer & have put it back on, so hopefully I'll be able to get them all in there tonight - and get my fridge back!

  • OK everyone please excuse my ramblings below but need to get it off my chest (again sorry!) somewhere & this is easier than trying to explain it on the phone to someone.

Saw my consultant today as still having problems with my foot after surgery ..... bottom line is it's knackered and there's nothing more they can do:(.

Further surgery is "highly unlikely" to make it any better & could make it even worse.

He also said it's "extremely unlikely" (funny how certain phrases stick) that it'll ever be pain free.:(

I know there's much worse things to happen & feel really selfish for feeling like this but .... being in pain every single beeping day wears you down after a while - and being told that it's basically going to be like that forever ..... :(

He's prescribing pain meds that I'll need to take - when I asked for how long, he said for the rest of my life ...... but the worry is that I already take meds for my Crohn's (guess what, for the rest of my life) and they don't know if the 2 will react against each other:eek: .....

Walking is a big part of my life and I can't go nearly as far, quickly or walk on uneven terrain anymore already and been so looking forward to getting back to that

Sorry again for moaning:o - thanks for listening if you're still with me.
