    Buddha bowls are a combination of mixed grains (I use millet, quinoa, brown and wild rice), pulses (I will probably use chick-peas as I have a couple of tins I want to use up), raw greens (finely chopped broccoli, kale or spinach is what I usually use along with parsley), avocado and some type of dressing...all in a bowl!!;) I love them, plus they are mega-healthy!! :D

    I change the dressing frequently which changes the entire flavour - I have quite a bit of orange and honey dressing made up at the moment so will probably use that this time - but I always use the same basic mix as the grains are high in all sorts of protein, minerals and vitamins, the avocado is fab for essential fatty acids, the greens are fab for a variety of vitamins (parsley is one of the best multi-vitamins you can get!!) and the pulses are a protein fest!! :D:D

    Mortgage will be sub 39k by the end of this week....tantalisingly close to the magic 36k!!;) I was hoping to get to sub 36k by June of this year prior to being made redundant last year, so although I know this isn't achievable anymore, the rush is on to get there asap!!

    Now I am back at work (and the credit card is all but paid off :o) I want to really hit the mortgage as hard as possible....especially as my contract is only for a year and I may be unemployed again at the end of it :( The more I can do between now and then, the easier my life will be - I am pretty confident that we can get to the high 20's by the end of the year which will be absolutely amazing - my MFiT challenge is to get to 10k by December 2015 which may be possible if I remain in employment but obviously I can't count on that... if I am totally honest, if I do keep the job, I would really, really, like to have the entire thing gone by the end of the MFiT challenge ;)But that is only 20 months away so about as likely as winning the lottery!!:rotfl:However, a girl can dream......:D

    Finishing in 2015 would be amazing. And with your monthly numbers, and as you say continuing your contract, I think you can do it.

    Repayment!! :D I'm keeping my fingers crossed that I keep the contract, increase it to full-time if possible and finish in 2015....who knows, stranger things have happened!! ;):rotfl:

    It's very possible it could happen, and with your spirit and determination, I'd never say never :)

    Btw, Buddha bowls sound terrifying, and crazy healthy at the same time. My inner health freak is crying out to try them, and my lazy a£se carb and fat freak is utilising a rare bit of energy to beat that idea quickly into submission.

    Oh well, slow and steady wins the race :) I will be a size 12 one day, with excellent cholesterol, perfect skin and great fitness levels, but for now, I might just go and sneak a bit of cake with my lovely cup of tea (thanks DH... )

    They are fab Gib, honestly! I ended up doing them on Tuesday when I got home from work....I added some almonds, dried dates, apricots and figs and whacked in a bit of cinnamon and a few leeks....best bit about it is, you can make a huge amount at one time, freeze it into portions and just add the greens, avocado and dressing once it has been defrosted and re-heated ;) I have another three pots in the freezer now.....I do love mega-tasty and easy meals when I have got home from work at stupid o'clock!!!:D

    Another £650 off the mortgage today! :j I am really hoping for a good month this month...I shall see what happens when pay-day comes around ;)

    I have been good with the grocery budget this week...just milk and oil to add to the total after my shock at the weekend!!:D I did buy a few other bits (laundry liquid that is on offer, some cling film and kitchen roll) but they were all on a gift card that I had so I am not counting that...I also found a full loyalty card from my local butcher in my purse earlier in the week so when I get the dog food on Saturday, I will pop into the butchers and get some 'freebie' mince to put into the freezer for later in the month :D

    I have failed miserably on the smoking and drinking front this week though :( No real excuse...just my way of dealing with the crazy days I have had at work :mad: Never mind, tomorrow is another day and I hope to have got it under control by the time the bank holiday weekend is over ;)

    I have managed to catch up on some sleep due to having no internet access for a couple of days and dh watching so much snooker on the tv it practically put me into a coma!!:rotfl: Must admit, I do feel a lot better for it....and I am going to have another snooze later this afternoon once I have got to grips with some housework! :o

    Right, off to catch up on some diaries if my internet connection doesn't poop out on me again....but, just in case....hope you all have a fab holiday weekend!!:wave:

    Having a busy weekend with the intention of having absolutely nothing to do tomorrow!!

    Did the weeks meal plan, went to the bottle bank, butchers, pet shop and sm yesterday morning....spent more than intended due to my 'loyalty' card from the butchers not being quite what they had signed me up for :mad: but stuck to the lists and am doing better than usual on the grocery front!! :D

    When I did the meal plan yesterday, I totally forgot about feeding us dinner for the night, so made pasta with bacon and feta cheese from the fridge and averted the hunger crisis!!

    Spent the rest of yesterday in the garden (as today will be!!) trying to get some semblance of order!! :o I started weeding the side patio and am now half way through it...that will be finished by the end of today and the garden will actually start to look decent!!;) dh strimmed and tidied hedges, ds cut the grass and then started to help on the side flower beds and will hopefully be helping again today! :D I now have flowers on my broad beans too!!:j

    So far today, I have done some washing, filled up the bird and squirrel food, prepared the veg for dinner and got the Sardinian lamb in the oven....now drinking latte as everyone else is still in bed so nice and peaceful here....just hoping that the sun comes out at some point so that the garden will seem more inviting!! ;)
