  • I cheated yesterday and had the rest of that reduced chinese from the freezer. However I did find loads of chestnuts and today I am going to make Marrons Glace :)

  • I made this chicken and potato dish yesterday - slices of potato with olive oil drizzled over. Then on top I put chunks of chicken that had been mixed with cream cheese, chilli and garlic. i baked this covered for 40 mins then put a little grated cheese over the top and baked for a further 20mins at about 180c. It was okay...missing something but not sure what.....anyway I made 2days worth :)

    I have the best two dishes that are cheap one is a rice one and the other spaghetti/pasta. Its indian though (as i'm indian) so you do need a couple of spices but if anyone interested please let me know xxx

    p.s both are veggie but i guess you could add meat x
  • Sorry for the delay been working my butt off! I made lasagne and it lasted me 5 days!!!!!

    Here is the recipe -

    Lasagne!!!

    Lasagne Sheets
    Grated cheese


    Bechamel Sauce
    50g butter
    plain flour
    1.5 pints of milk
    bay leaf
    half chopped onion
    salt and pepper

    Melt the butter in a saucepan then stir in enough plain flour to make a very thick paste. Slowly add the milk bit by bit and whisk to keep it smooth. The sauce should be nice and thick when brought to the boil. Add bay leaf, chopped onion and season then leave to sit while you made beef part -

    Tomato Beef Mix
    400g beef mince
    25g tomato puree
    rest of onion
    2 cloves garlic
    glass of red wine
    salt and pepper

    Fry the onion and garlic, add beef mince - fry until all brown. Add tomato puree and red wine the leave to simmer for about 10 minutes.

    Lasagne Construction!

    Layer half the beef in a lasagne dish, then cover with 1 layer of lasagne sheets. Cover these with half the sauce, sprinkle this with cheese. Cover with 1 layer of lasagne sheets. Cover this with rest of beef. Cover with 1 layer of lasagne sheets, pour on rest of sauce and sprinkle more cheese on top.

    Bake in oven for about 30-40 minutes at 180c gas mark 5.

  • Today I found a huge pack of Tesco Finest Salmon originally £15 marked down to 75p!!!!! Split it into 3 and froze. Will be very nice.

    The good news is I estimated I would be £200 in debt...but I am only £88 thanks to new food budget and voucher usage!!! This forum has been a utter stress saver! Thank you Martin :.) :j
  • I made your pasta bake again last night, it's going to last 4 meals for just myself. I did make some alterations to it though to include some veg and I needed some iron as my diet is currently lacking any:

    1 whole chopped red onion fried in a small amount of butter, then add 10 small mushrooms to the pan, add a tin of chopped tomatos and leave to simmer with some salt and pepper. Add half a tub of cream cheese to the frying pan. Boil kettle, add 1/2 pint of water to the dish filled with pasta. Add contents of frying pan to dish, then push lightly with a spoon to mix. Put some spinach on top (iron). Then 5mins before finished add thinly sliced cheese.

    It was less watery this time because of the tinned tomatos.
