I have a pack of peppered smoked mackerel to use up by tonight. I love it by itself with bread and butter, but would like to make something a but more substantial for my DH.
Does anyone have any ideas of how to incorporate it into a recipe?

Try this one of mine ...
SMOKED MACKEREL PATÉ
Serves 2
INGREDIENTS
2 smoked mackerel fillets
2 or 3 tablespoons of butter
1 teaspoon of lemon juice
METHOD
Pull the skin off the fish. Break the fish into flakes.
Put the fish, 2 tablespoons of the butter and the lemon juice into a bowl. Mash it together until it is spreadable and to your desired consistency.
Add the other tablespoon of butter, if required.
ADDITIONS & ALTERNATIVES
Use smoked mackerel fillets with peppercorns.
Use soft margarine instead of the butter.

My version of smoked mackerel pate involves creme frache, or cream, or cream cheese or yoghurt, basically anything dairy except butter (!) and then chuck in a good slug of lime juice if you have it, or lemon juice. If you prefer it to taste a little of citrus but don't like the bitterness of lemon or lime (I love it), then the grated zest instead. In addition, if you have any chives or parsley, that jazzes it up too.
I find the stuff utterly addictive and wake up with a craving for it. Should I be embarrased to say I have it on toast for breakfast?Better is good enough.0 -
We make fishy rice. It used to be a great standby here with the smoked mac as it was so often reduced.
Fry an onion and garlic too if you like, and add some curry powder, stir it about a bit, add rice and stock. You can put in some other veg if you want - we like frozen peppers. Cover the pan and simmer until the rice is nearly done, then lay the mackerel over the top of the rice and replace lid for a couple of minutes to heat the mackerel through in the steam. When the rice is done just fork the fish through, and add some eggs if you like, either chopped hard boiled ones, or poached. We liked it with thai sweet chilli sauce on

Last night I made smocked mackeral and leek pasta bake, recipe is on the bbc website I think. It'd be good to hear other ways of using it as my recipe searches came up with about 95% pates or on toast haha and I love the stuff!!0

Smoked mackerel risotto. Make the risotto with onions and whatever veg you've got, flake the fish and add it near the end of cooking time to warm it through.0
