I'd have it on its own as a main meal, but I wouldn't use straight cauliflower, I'd also add in other veg, such as peas, chunky carrots, broccoli etc, so more like mixed veg in a cheese sauce. It doesn't need anything else with it imo as it has quite a bit of fat and flour in the sauce.

Macaroni cheese I always serve with frozen peas/frozen mixed veg mixed into it too, as I think there's not enough "goodness" in just pasta and cheese sauce.

Despite not really being a fan of tomato ketchup in general, I always have to have ketchup with mac/cauli cheese!

Bacon/pancetta or chopped up frankfurters would probably go quite nicely with it, but it would make it quite heavy in fat from a health point of view.

I like brocolli and cauliflower cheese either with some crusty or garlic bread.
  • As a main meal I always add hard boiled egg, sometimes bits of well cooked bacon, and brocoli for me.
For extra carbs it will be one of the following ; boiled new potatoes, jacket potato, pasta or crusty bread.

I have cauliflower cheese for my christmas dinner [I am vegetarian] instead of the meat, so will have it with a bit of stuffing, roast potato and vegetables.

Years ago we had to make a meat dish for tea at cookery lessons in school. I think I did spag bol but one of the girls was veggie, so she did cauliflower cheese and it looked yum but i remember thinking at the time, so is that all you have? Not for a quantity pov but for taste and texture. Nice to see I'm not alone in my thinking. :D

I must be the only person here who heats the bloody stuff, thankfully it was always as a side _pale_

I would be confused if somebody served this, it isn't really a meal unless it has meat in it somewhere (vegetables optional)...

Seriously though, as long as the correctly balanced nutritional value is there it doesn't really matter what the food substance is.

I don't normally eat it as a main meal, it just makes it easier on Christmas Day when I am doing 2 kinds of meat and all the other bits and pieces.

We eat this frequently as a main meal and we always have the same thing with it.

The perfect accompaniment to cauliflower cheese is plain boiled brown rice. It should be cooked until all the water is evaporated and it is soft but maybe a bit crunchy at the bottom. The subtle flavour of the rice goes really well with the cheese and it becomes a healthy meal. Delicious.
