Have you thought about making chutney?

I roast them in the oven with garlic, onions, basil and a little oil and then just blitz them in the mixer and freze in batches.

So my windowsil, greenhouse and fridge seem to be full of toms so I though I would make a sauce for pastas etc I am lazy and think lifes to short to stand a peel pulp etc so if I chopped them and roasted in the oven them either mixed them up or ran through a sieve, would this be ok?
I tend to roast them with other summer veg- courgettes, auberines, chillies, peppers- if I have them. Then I either use them chunky with pasta, or run them through the food processor and use with pasta or for a pizza sauce. I hardly ever peel and depip, like you said life is just too short and it's roughage afterall:D0 -
I am lazy...i put them into a big pan with a bit of water and cook until soft then i blitz them and freeze in portions which i then use in spag bogs, pasta sauces etc yes i do leave the seeds in and the skins on but this never bothers us, but you could put it through a seive after blitzing it if you wanted.
The other thing is Delia's tomato and basil soup is lovely and freezes well but i can't seem to find it on her website but here's another that looks similar:

I think its really to do with personal taste, but in mine i put:
Onions
Garlic
Dried herbs
Tinned tomatoes
Worsestershire sauce
Tomato puree
Chilli flakes

Heat olive oil
Add chopped garlic, red chilli and chopped basil stalks. Add salt and pepper. Cook til browning.
