tomato sauce for pasta pizza etc

Options
I am sure I saw a recipe on here before but I can't find it. I have tinned tomatoes, onions, garlic, tomato puree, passata, a little leftover red wine and some dried herbs. Can anyone help me put some or all of these things together to make a nice sauce?

If you look in the Cooking section of the MEGA Index sticky there are quite a few threads listed under "sauces" that will help you :)

    Intel - With Pasta???? Yuck.

OP - I would fry the onions and garlic until soft, then add the other ingredients and simmer for about 20 mins. Easy peasy.

I would do what Jet suggests, but also add a teaspoon of sugar to balance the acidity of the tomatoes/passata.

A small sprinkle of cinnamon in a tomato sauce is nice.

The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.

Chop and fry the onions and garlic together, until the onions start to go transparent, and the garlic starts getting brown. Season with a bit of salt and pepper. Add a big dollop of tomato puree and stir thoroughly, so it coats all the onions and garlic. Cook this on a high heat for about 5 mins. Turn the heat down slightly and add the passata and tinned tomatoes. Stir thoroughly again, then leave to simmer for 10 mins. Chuck in the herbs, simmer for another 5 mins. Drink the wine  :money:

This is the best tomato sauce I have tasted and is worth all the chopping!

Fry 1 small onion in 3 tbs olive oil for a minute and then add 1 small carrot, finely chopped and 2 sticks celery, finely chopped. Fry for another 2 minutes. Add one 500ml can passata or one 500g can chopped tomatoes and a little salt and ground black pepper. Simmer for 30 minutes and then puree in a blender.

    Very tasty!

(Of course you can add garlic if you wish and you can make double quantities and freeze it)

As above, but stick a slug of red wine vinegar and some olive oil in just before serving to give the sauce a bit of bite. You could do this when you are reheating it.
