I like mash with roast garlic.

I made colcannon the other day to have with sausages. I'm not sure how authentic it was, but this is what I did: made my mash, adding a splash of milk and knob of butter. I then boiled my sliced cabbage for a few minutes and left to drain. Then gently fried a couple of chopped spring onions for a few minutes, added the cabbage for a few minutes more, just to get rid of any extra liquid from them. Then stirred this mixture into my mash. There wasn't any leftover, but if there had been, then it could have been fried the next day for bubble and squeak.0

I like mash with philladelphia and nutmeg, with mustard, mustard and honey, cooking apple, cooking apple and mustard and honey, cheddar and spring onions, or just plain. I always use a nob of butter, a splash of milk and some salt however I make my mash.0

I sometimes put fried garlic or minced chilli (out of a jar) and stir it through.0

We sometimes use the following for varirty:
Horseradish
Mustard
Humous
Mint Sauce
Cream Cheese
Cheddar
Butered Onions/leeks
I love mash potatoe with grated cheese and sweet pickle on the side:D

Mmm mash! my fav. Gonna try out some of these ideas.
I've realised quite how boring my mash is. I sometimes stir in some mustard or some mint sauce... but that's about as adventurous as I've got!

my faves are
horesradish mash
cream cheese mash - add herbs if you have them
mustard mash
but all time fave is pesto mash sooooooooooooo yummy

One of my faves is to finely chop an onion and then just stir that it in to your hot mash, raw as it is. The heat of the mash takes the rawness out of the onion but keeps it crunchy and scrumptious. Celeriac mashed into the mashed potato is slurpy. You'll need to cook the celeriac longer than the mash though, it's harder.0
