open it. leave it a few minutes then sniff it, if it isnt discoloured and smells ok its probably ok to use. as the vacuum packs have a longer shelf life, they often last a surprisingly long time after the best before or use by dates.0

I agree, OP. I often find vac-pack bacon lurking in the dark recesses of my fridge and the sniff test has never failed. Why not kill (oops, bad choice!) two birds with one stone, and add it to that casserole. Chop it up small, fry it nice and crispy and throw it on top to cook for a couple of hours. Nothing could survive that!0

I had some of a similar age the other day. I opened it, smelt it, thought it seemed OK, fried it, tried a small bit and decided that it had a funny flavour so I binned it.If we are supposed to be thin, why does chocolate exist?0

Bacon is a very highly preserved product containing lots of salt and nitrates. As a result of this, it's not one of those foods that tends to get implicated in food poisoning cases.
However, it can spoil and if it's got a shiny green sheen on it, then the spoilage bacteria have been having a party!
Open the pack and have a smell of it, if it's turning, then you'll smell it. It it smells okay, then do the cook well and taste test.
I frequently find things that have been lurking in the fridge way past their date, use them to no ill effect and haven't made anyone ill......0
