    my girls like baked bananas. put them on their side on a baking tray, slice down the length and put a couple of squares of chocolate in each and bung in t'oven until skins are black and bananas are gooey, serve on own or with cream, ice cream...can also be done on bbq in the summer, just wrap in foil first x

    'idiots' guide to microwaveable upside down cake

    serves 4 very greedy people, or 6 if you are stricter with portion sizes and don't let your OH back for seconds and thirds :rotfl:

    take a large microwave-safe bowl (i use a plastic mixing bowl as it's big so the cake has plenty of room to rise). grease the inside of the bowl lightly with butter or spread. line the sides and bottom of the bowl with golden syrup (i tend to dribble it down the sides - some sticks, most of it ends up pooled in the bottom of the bowl). I stopped using spoonfuls as i found it wasn't syupy enough for our tastes, so i do it by eye, aiming for about 1cm deep puddle at the bottom). decorate the bowl with pineapple rings. I start in the centre and work my way up the sides uptil i run out of rings. If it's a big tin, i'll chop any spare rings and add it to the cake batter, along with the pineapple juice from the tin.

    the batter then is just a standard sponge cake batter.
    100g butter,
    100g sugar (muscavado works best but i've used whatever i've had in with no ill effect. Muscavado just helps improve the colour of the sponge)
    100g self raising flour
    2 eggs
    3 tbsp milk

    blend the batter ingredients together, add it to the microwavable bowl. pop in the microwave and cook on high for approx 10-12 minutes. Cooking time will vary from microwave to microwave, but as with any sponge, you can tell it's done when the cake starts to come away from the side of the bowl and a knife inserted into the sponge comes out clean. you can, if you're feeling posh, put a plate over the bowl and turn the whole lot upside down, but i just dish it up from the microwaveable bowl.

    serve with custard or icecream. if by some strange miracle you have some left, it tastes even better cold the next day - sticky, gooey and sweet :D
    PD you are so clever. I'll give this a go with non-dairy and egg substitutes.

    The frozen banana is a great diet trick - works well in ice-cube tray if your just after the tast of something sweet...or blitzed into a smoothie, doesn't require any additional ice.

    I'd keep an eye on it from about five minutes onwards because microwave power varies a lot across make and models.

    The longest I've ever had to cook a pudding in my microwave is eight and a half minutes (chocolate beetroot cake) and a standard sponge normally five and a half minutes. For the recipe given I'd expect timings on my machine to be nearer eight than five because of the syrup and pineapple soaking up heat.

    Fastest ever pudding? Meringue nest (shop bought), fruit (fresh is best but drained tinned fruit is fine) and aerosol cream on top. I make this one while camping. A lot. You can use chocolate aerosol cream and crumbled Flake as well.

    we used to do those baked bananas too but ours had a big dollop of yoghurt and a spoonfull of jam added after they were baked.
    Baked apples are easy in the microwave and you can add dried fruit with treacle or jam or just lemon and sugar.

    I'd second meringue nests from the shop. Crumble them up with whipped cream and fruit (raspberries, strawberries etc work well) and it's Eton Mess. Pile artfully into nice glasses and grate dark chocolate on top and it's even a bit posh.


    It works as well with a fruit Muller Light instead of the cream for a diet version. There aren't many calories in those meringues -mostly sugar but no fat.

    Rice pudding couldn't be easier or sliced a jam swiss roll and pour hot custard over and leave for 10 mins before serving.. you can add a can of fruit too if you're feeling adventurous..lol

  • Chocolate pudding (serves 2)

    1 cup skimmed milk (or any milk but I use skimmed for less calories)
    1/8 cup cocoa powder (I just guess the amount really, you hardly need any)
    1/4 cup sugar
    1 tsp vanilla
    1 tbsp cornflour

    mix the dry ingredients together, add milk and bring to the boil. KEEP STIRRING! and it will thicken up into a lovely chocolate pudding which you can eat hot or cold - I like to put some frozen berries in a dish and pour the pudding over the top and leave to cool for about 15 minutes. the berries defrost and the pudding thickens nicely.

    You can also just make plain vanilla by leaving out the cocoa powder, you might need a tiny bit more cornflour but you can just add it if it doesnt seem to thicken up enough.

  • Oooh the pudding mix also makes nice lollies - just pour it into lolly molds and freeze.

    Frozen bananas are good if you cut them in half, put a lolly stick up them and freeze. after about 30 minutes take them out and dip them in melted chocolate/melted chocolate spread. the chocolate will harden quite quickly because the banana is frozen, put back in freezer uncovered for about 15-30 minutes, just until the chocolate is hard and then you can wrap them in foil and put them back in the freezer.
