I know I'm probably on the wrong board here, but maybe, just maybe, someone has an answer for me! Ages ago there was a recipe I saw, I think on MSE, for a celebration style oatmeal and fruit cake, it was iced with yoghurt and quark. A friend is having her birthday meal out with us soon, and I want to make a cake for her, but she is allergic to eggs, nuts, doesn't ever use sugar and has irritable bowel syndrome (think that's what it's called) so I have to attempt something fat free, sugar free but lovely - she does eat fruit, so thats a help. A clever cook would create something without batting an eyelid, I'm not a clever cook! So, if anyone has any ideas that might help, you would make me a very happy soul. Why do so many people suffer with allergies nowadays, I'm sure it wasn't like this when I was a child, maybe I just didn't notice and it was a very long time ago! :(

Thank you, it looks delicious, but no good for my friend, she's allergic to eggs. There's probably a way to modify the recipe, wish I wasn't so useless at all this! On the other hand, I make great scones, Irish soda bread and tea fruit bread, I just don't have the imagination to conjure up something different, if I tried, I'd just make a mess of it. But, thanks for your help......what do I do now....?
