  • I've ended up with 3 packets of Brussels pate (2 unopened but with short expiry dates).
    Does it freeze well? What can I do with it that doesn't involve spending the first 2 weeks of January having a pate and crackers diet?! :confused:
    Thanks in advance if you can help.

    Hi Solwaykid

    Pate freezes well providing it hasn't previously frozen. There's an earlier thread with lots of ideas that may help:

    using up pate?

    I'll add your thread to that one later to keep the suggestions together.

  • Thank you, I thought there'd be a thread already, I just couldn't find it.

  • Hi all, hope this is posted in the right area!

    I need some help with using up some leftover Smoked Salmon Pate, but whenever I google for ideas I keep getting recipes on how to make pate with leftover salmon!!

    Any ideas? I've got a good half a tub left and refuse to chuck it away!

    It should freeze OK until next time you fancy some, honest :)

  • Could you turn it into a pasta sauce? I'd mix it with a little cream (or creme fraiche) and then stir it into cooked pasta. Maybe add a little lemon juice to give it some bite.

  • As madvixen suggested mix it with a little cream or creme fraiche and then use it to make a smk salmon quiche, or add a few more ingredients and make a fish pie or fish chowder?
  • or fish cakes?
  • I think fish cakes would be lovely - you could mash some potatoes without adding in any milk or butter, then keep adding bits of the salmon pate until the mixture tastes right and holds together without being sloppy. I'd make the mixture into patties and just fry as they are but I expect it would probably be nice to breadcrumb them first.
  • Once frozen how long do you leave to defrost? Thanks in advance :-)
