    I am curious Busygirl as to what an Inside out pizza is

    I do my shep pie filling in the SC aswell, making extra to freeze for mince and dumplings etc :)
    One day I might be more organised...........:confused:

    Inside out pizza (named by my kids)...
    1. Fry tin toms, onion, peppers, tom puree, garlic herbs etc
    2. Then in a clean frying pan add a drop of oil and pop in a tortilla wrap and spread some of the above mixture onto it, pop on top another wrap and fry for a few mins.
    3. Turn it over carefully and fry on other side.
    4. Remove from heat and cut like a pizza!
    I make up the mixture a head of time and freeze it so it is a really easy/lazy meal.
    It can be eaten on its own or with hm chips, rice, veg etc.
    It is really filling and the 4 of us struggle to get through 3 of these (we usually use the torilla wraps from Aldi-6 in a pack).

    If we have any left-overs then the kids take it in their packed lunches the next day.

    edit (sorry I forgot to say sprinkle grated cheese ontop of mixture before putting the other tortilla on top)

    trout... anyone know any nice trout recepies?
    sat - sarnies
    sun- cnt remember at the moment

    Am sticking to menu plan but unexpectedly made an extra! I am trying to work a day in front so that when I get home from work all is prepared (that is the plan anyway!) Tonight was making chicken and mushroom casserole and realised there was quite a lot of chicken so split and made - da da chicken and veg lasagne as well.

    Stuff I used

    400g chicken cubes
    1 onion
    2 carrots grated
    tin toms
    3 stray mushrooms
    italian herbs
    bay leaf
    1 tbsp tomato puree
    handful of frozen peas
    chicken bouillon cube
    jar of lasagne white sauce (can't remember even buying that)
    8 sheets lasagne
    grated mature cheddar
    clove garlic

    What I did

    cooked the onion mushrooms and garlic in a little oil added tomatoes puree,carrots, herbs, peas and stock cube to make the sauce.
    Stir fried the chicken quickly and when the sauce was good consistency (bout 15 mins) added chicken. Put half of sauce in dish (bout 10 inch by 8 inch) plus half jar of sauce added 4 sheets of lasagne, rest of sauce, another 4 sheets of pasta and a the rest of the sauce. Grated cheese on top and put in oven for 30 mins.

    Looks like it would do 4 big portions or 6 'normal ones' Will freeze and add to next weeks menu plan.

    Smells and looks divine! Taster DS1 said yum!

  • Hi, all! We've been grabbing stuff from the freezer this week, but now I'm back to menu planning again. I have a chalk board in my kitchen (old ELC one now surplus) which DD decorates with chalk drawings to match the week's meals :A

    We have a take away or meal out once a week, DH cooks a Sunday roast, which provides another meal of sliced meat, or a curry/pasta sauce. We're also planning at least 2 meat free days a week (so DH might need to do a veggie Sunday :D ) The children go out before DH is home from w*** on Monday and Thursday, so those nights need to be something that can be served twice. I go to choir on Thursday and afterwards often to the pub, so that's usually bread, cheese and fruit for me.

    Friday - spag bol

    Saturday - meal out in London after the theatre. Have an italian restaurant in Covent Garden in mind.

    Sunday lunch - HM / HG parsnip soup, seedy bread, cheese

    Sunday - roast pork, etc, Christmas pud

    Monday - veggie shep pie

    Tuesday - pork curry

    Wednesday - veg crumble

    Thursday - pasta and sauce

    Friday - HM burgers (with my new burger maker ;) )

    DD has asked for chicken, leek and sweetcorn pasties for her lunchbox, so I have boneless thighs for that.

    We don't usually have puddings mid week, mainly fruit, but I've just got a yog maker from Freecycle, so will be trying that. I do bake, though, so banana choc muffins and a fruit cake on Monday.

    Off to browse Gingham's veggie meal planner.

    We're trying to use stuff out of the freezer and storecupboard, there's enough food in there to feed an army. I've been banned from the supermarket for this month by hubby!!! Anyway I've managed to do a menu plan for the next 4 weeks and still only scratched the surface. So this is for the week beginning January 7th, as we are out at friends tomorrow

    Slow Cooked Lamb Stew

    Veggie Pasta (*freeze an extra portion)

    Salad, Jacket Potato with Prawns and seafood sauce

    Pork Mince Burgers with Cauliflower Cheese and Green Beans

    Chilli made with the other half of pork mince with Rice.(*freeze an extra one)

    Tuna Salad with wedges or Jackets

    Veggie Pasta for me Chilli for hubby (*) with salad and crusty bread.

    Breakfasts will be porridge or cereals

    Lunches will be crispbread and low fat philly or soups

    Desserts Fruit or Yogurt

    Just have to buy fresh veg, fruit, salad and Milk this week:D

    Awww how sweet Penny, I like that idea with the chalk board but my son would probably try and rub it out all the time :rotfl: saying that would always have a copy on here to refer to!

    Going to sort next weeks meal plans tomorrow, kids are back to school and have to make much more effort with more OS things for packed lunches too.

    PS to blow my own trumpet the beef stew was absolutely fab and is enough left to freeze so it'll be on next weeks list too (if I don't have it tomorrow aswell :rotfl: )

  • Mine's just a rough - I have trouble with cooking due to nerve damage but am gradually finding ways around it (not safe with a knife but lakeland does a killer dicer for example)

    SUN - cook free day. Cereal & fruit for b'fast. Lunch at Meeting (church) and frozen roast for dinner. Paper plates & cups so no washing up.

    During week, make porridge in double boiler for breakfast every day.

    MON - Roast chicken leg & sweet potato wedges in remoska with peas
    TUE - Experimental Bean paprikash with bacon
    WED - Bought dinner (pizza/ready meal etc)
    THU - Pasta with veg & sauce using creme fraiche leftover from Tues.
    FRI - tinsa & rice
    SAT - spag bol from freezer

    I'm trying to minimise serious cooking to only a couple of days a week and have to make sure that if I'm low on energy, I have the main meal at lunch time otherwise I end up ordering a pricey takeaway because I can't be bothered to cook.
    If you think reality makes sense, you're just not paying attention!

    Here's mine starting today...

    SAT - frozen hm chicken curry, rice and popadoms
    SUN - ham/sweetcorn pasta bake
    MON - frozen hm chicken and leek pie, roasties, carrot/swede
    TUE - hm veg hotpot and crusty bread
    WED - tea at mum's !
    THUR - spag bol
    FRI - (lazy tea) pizza and oven chips

    hi everyone.

    After an expensive and exhausting christmas and New Year I am back to the menu planning. I ordered from Tesco online to make sure i didn't get carried away with so called bargains!!! I spent £50 including all toiletries and cleaning products and this should feed us for two weeks with us only requiring a couple of extra pints of milk and another loaf of bread.

    B - porridge, weetabix or wholegrain toast

    L - HM soups, salads, baked potatoes or sandwiches

    D -

    1. Lemon sole with veg and potatoes
    2. Toad in the hole with green veg
    3. sausage casserole, rice and veg
    4. chilli con carne and rice
    5. lasagne
    6. Pasta bake
    7. salmon pesto with veg and baked potato
    8. beef stew, veg and dumplings
    9. Chunky veg, bacon and pasta soup
    10. Beans and poached egg on toast
    11. Chicken curry and rice
    12. Steamed salmon, veg and baked potato
    13. lemon and broccoli stirfry pasta
    14. roast veg and pasta
    15. Beef burgers and salad
    16. Roasted chicken thighs with yorkshire puds and veg
    17. casseroled chicken thighs, veg and rice


    having listed everything i think that we can actually make this stretch to almost 2 1/2 weeks - that would be great and looks like we are on target budget wise. Going to keep a close eye on things and will report back. P.S budget now so important as OH proposed and so we have a wedding to save for!!!!!!!!
