I opted for a chicken fried rice which was lovely apart from the fact I only had marrowfat peas so it went a little green :rotfl: still tasted good though

I have been trying to make meat stretch further as it's probably the biggest expense food wise that we have. I'm very proud that this week I managed to make a 3lb piece of gammon do 3 meals for 2 adults and a toddler, plus make soup for lunches to go in the freezer. I made roast dinner, a gammon and leek pie and a carbonara, plus about 4 pints of soup :j I paid £5 for the meat from the meat van on our local market, so I'm pretty chuffed I made it stretch so far.
So, how far can you stretch your chicken/joints of meat? I'm sure lots of hardcore OSers can beat me!So, there are these boys,

OK I have streeeeeeetched a chicken as follows
Roast (with stuffing so eat less meat)
Curry with some leftovers (enough for 3 adults)
Sandwiches with the rest
Stock = soup and risotto
I am sure I remember someone on here who posted saying they had made a chicken last a whole week but can't remember where I saw it... T'was a long time ago - wouldn't mind finding that again and seeing how they did it.0 -

I decided quite some time ago - when i became more OS, i would rather have meat less often and more of it so i often have meat free days - well, mainly meat free
If i buy a chicken it really is a luxury - taking a HM chicken sandwich to work is a luxury for me and i so appreciate it. I don't like feeling deprived of food so do like the odd splash out roast dinner with as much chicken as i want ! Because i hardly eat it , for me i appreciate it all the more. I stretch it as far as I can while still having decent portions. You're making me want chicken now!:p
WOuld you be interested in some veggie/meat alternative threads? It's amzing what you can do. I have a relatively new boyfriend who is veggie and it's really pushed me out of my comfort zone having to cook for him. I am now introducing him to pulses and grains as he tends to eat pre packed quorn all the time! Lazy boys

I can't quote you a record breaking number of meals from a joint but I'm pretty pleased with my 'stretching' ideas:
To start with you can get a lovely roast from shoulder of pork with heaps of leftovers. It's very cheap at the moment.
As well as ideas above (or below) I use small pieces of meat (pork/chicken/beef) left over from joints for stir fry or savoury rice with loads of veggies in.
I find cutting sausages into bite-size pieces makes them go much further in toad in the hole or sausage casserole (3 sausages is plenty for two people). Obviously the batter helps the one but I add a tin of butter beans to the casserole.
A little bit of chopped bacon (2 rashers for two) with some mushrooms and courgette (home grown) in a cheesy sauce with pasta. Or a few frankfurters (99p in Lidl) chopped into a tomatoey sauce.
Then there's all the ways to stretch mince with veg and pulses.
And on top of that I think it's a much healthier way of eating.0 -
I reckon that I could get 10 meals from 1 chicken. I live alone, so most of these are frozen.
1. Roast the chicken on Sunday, and have 1 leg with roast potatoes & boiled veg'.
2. The other leg cold with salad on Monday.
3 - 6. The two breasts to make either 4 x 250ml bowls of chicken & sweet corn soup, or 4 servings of chicken curry.
7 - 10. The carcass to make 4 x 250ml bowls of chicken soup.
All that is left is a pile of bones.The acquisition of wealth is no longer the driving force in my life.0 -
I am pretty good with a roast chicken but as there are only 2 of us (tho' big strapping husband with huge appetite!), I still think I could improve my 'stretching' ability if I had to. This week:
-Roast chicken (Tues)
-Chicken fajitas (Weds)
-Chicken & vegetable fricasee on jacket potatoes (Thurs)
I put the carcass & left over gravy & veg water from the roast dinner in the slowcooker overnight so as to make stock on the cheaper electricity tariff. The stock was used in the fricasee and also in
-3 portions of chicken & vegetable soup for the freezer
I also made
-Chicken & homemade sage & onion stuffing sandwiches for partner's pack lunch on Weds
-Chicken & salad sandwich for partner's lunch on Thurs
The bones & stuff from the stock went in the Green Cone so will help feed the garden. If I had to get tighter, which let's face it, everyone working in public services may soon have to do, then I know I could have done some veg with the fricasee and frozen some for another meal and I could also have used the soup as a main meal instead of freezing it for lunches, as it's quite chunky & filling x2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever
2) To read 100 books (36/100) 3) The Shrinking of Foxgloves 6.5kg/30kg

It's amazing how far you can get one chicken to go! I have a friend who spends £10-£15 per DAY to feed her family of 5, and that's just the main evening meal as the kids have school dinners and they get their breakfast cereal from costco once a month. I couldn't imagine spending this much and hate to imagine how much waste she has...So, there are these boys,
