I don't make a creamy chicken soup unless I'm making chicken and sweetcorn but I do make a yummy comforting chicken broth...recipe here

I need to stetch our chicen further as I make enough for roast bulk of it goes then, some leftover next day usually in sandwiches but confused how to make stock or what to do with carcass and bones .
Can I make soup with carcass or does that just make chicken stock.
I have pickled tiny bots chicken off bone and added to rissoto in past.
Hubbys not keen on cooked chicken in curries he perefrs breasts which are so pricey.
we buy freedom or free range, love the corn fed chickens so much more flavour.
Can you do same with duck or turkey.
I buy cheaper legs and thighs for casseroles.
anyone cut it up raw and cook it separate parts or do you just cook whole bird.
i use the fat for roast potatoes when chickens cooked.
i also stuff both ends of chicken wit lemon keeps it nice and mist and some parts has nice lemon twang which might be nice with noodles.pad by xmas2010 £14,636.65/£20,000::beer:

Well I was due to go out for lunch but that is now cancelled. I bought a cooked bbq chicken yesterday from Asda and had some last night but still have loads left. I had the whole yorks pud and veg experience with it yesterday so wondering if anyone can inspire me with some other ways to use the rest of the chicken today.

Some of the things that I make are chicken and broccoli pasta bake, chicken and leek pie, chicken fried rice, chicken and mushroom risotto. Also remember to save the bones to make stock for soup.

Wondering if the bones will be ok to use even though it is a bought chicken? Never made stock before but that could be a good idea for my meal plan as well0 -
Yes they will be absolutely fine....I use any chicken bones to make stock. When you think about it the bones won't any different from a chicken that was cooked in your oven rather than the one in the supermarket.

Oh lovely thank you I have often used chicken stock cubes to make a risotto so it will be nice to have some HM in the freezer.
Are the quantities the same for HM stock as they are for bought I wonder?0 -
