I had to go and look up the pie plate on the Lakeland website and now I want one!
Here's how I make apple pie. Preheat the oven to 190ºC.
Pastry:
240g SR flour
90g caster sugar
120g butter straight from the fridge, cut up into small bits
1 egg yolk
1 tbsp cold water
Sift the flour into a mixing bowl and mix in the sugar. Rub in the butter till it looks like breadcrumbs. Mix in the egg yolk and a tablespoon of cold water. Flour your hands and press it together till it forms a ball. Don't overwork it.
Divide the pastry into two, flour your surface and rolling pin and roll out one half till it's a bit bigger than the pastry plate. Transfer this onto the plate (roll it over the rolling pin to be able to lift it - I find you need to use plenty of flour on the rolling pin so the pastry doesn't break up).
Peel, core and slice two big cooking apples and pile it on top of the pastry base. Sprinkle a couple of tablespoons of sugar on top and a couple of teaspoons of cinnamon if you like it.
Roll out the second half of the pastry, same as before.
Brush a bit of milk around the edge of the pastry base (this helps the two halves stick together) and put the top on. Cut a cross in the middle to let the air out, and trim the edges with a knife. You can use the leftover pastry to make leaf shapes to decorate the pie - my mum always did this and I've got the habit from herUse milk to stick any decorations onto the pie lid, and then brush the whole thing with a bit of milk to make it nice and shiny.
Bake for about 40 minutes till it's golden and crispy on top - you might need a few minutes more or less so keep an eye on it after about half an hour. When it's done, sprinkle caster sugar over it. And that's it!
I find this particular pastry recipe is a bit more difficult to manage than some others I've used, as it does tend to break up a bit so you have to be careful, but it's so tasty and has such a nice texture that it's worth the tiny bit more effort.

Oh, forgot to say I never ever stew the apples before putting them into the pie, I know lots of people do but I find it too soggy.0 -

oh yeah when i made them with my gran she stewed her apples. Can i ask what butter do you use? thanks again.0

I usually use Stork margarine. The blocks, not the tubs.
My mum always used half Cookeen (vegetable fat) and half Echo margarine. Her pastry was fantastic, really light. But I use Stork because that's what's always in my fridge.0 -

How good was the pie plate to use?
I was eyeing those up a week or so ago.. I'd need 2 or 3 to feed my brood but we all like different stuff so it would be good for that... mmmmmm.. bacon and egg pie.....

Hi everyone
I have made an apple pie, all by myself :j:j (I don't bake much-more of a savoury girl:D)
It has Katie stewarts mince pie pastry (the one with almonds and an egg yolk in it) bramley apples cut up, some sugar and some mincemeat.
How long do I need to bake it for. I didn't blind bake the pastry-I was planning on heating baking tray, then sticking the apple pie on it, but can't figure out a temp and a time-am reckoning needs at least 30mins so the apple cooks but don't want the pastry to burn?
Does 180 for 30mins sound ok? I have a fan oven....

You could try covering it with foil for a short while on high then lowering temp to get teh pastry golden.Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.0

I have a fan oven and would cook a pie at 180 too. 30 mins sounds about right, but keep an eye on it and do as Gizmo suggests if it looks like it is browning too much.
I love apple pies and crumbles with mincemeat in them;)0
