Home Made Apple Pie ?????

Hi All :)
can anyone tell me how to make REAL home made Apple pie like Grandma used to make.
She used to make it on a deep dinner plate and it was scrummy.
At our local market they had some really cheep cooking apples they were selling off at the end of the day,but sadly i didn't buy them because i didn't know how to make the apple pie.
I have a gas oven so please include times and temperatures.
Thanks
P S i do not have a food processor

i remember my mum making this....

am of no help to you whatsoever with regards to amounts/ times, temperatures etc, but what i do remember is her chopping the apples up, and stewing them in the saucepan with sugar, cinnamon etc etc make a sort of apple sauce.

she would then make the pastry, covering the base of the plate, before adding the filling, then the top (a pastry circle too big for the plate so that you can cut off the excess to leave a perfect sized lid). the edges would then be pleated, she'd make a leaf shape to decorate the top, brush with egg or milk, then pop in the oven.

and as god is my witness i dont think i have ever smelt anything so divine in my life *drools*

    Shame on you!

Get yourself into your nearest large town and visit a discount bookshop and buy yourself a basic cookbook (a fiver should pay for it).

In the long run it's well worth it, you'll find out how to cook the various vegetables that are in season.

e.g. Got a marrow from sainsbury's for 20p and my dairy cookbook told me how to roast it with added sugar, scrummy. :)
Just for one moment, thought I'd found my way.

By the way you need about 8oz shortcrust pastry (home made for pref)
roll out line the metal plate ( better heat conduction,no soggy bottom!!) with half of it. Sprinkle some oats on top to soak up juice. slice apple and put on top, dampen edge of pastry on plate roll out other piece and lay on top, press down edges, cut off surplus.
Brush with milk and sprinkle with sugar cook at about 200 C for half an hour or so until brown on top.
Add sugar to the apples ifyou like them sweet or cloves are good too.
    serve hot with ice cream...mmmmm!
  • Excellent recipies at https://www.be-ro.co.uk. There's something for everyone. I had a hard copy for years but use the Internet now. Why not have a quick look and choose your week's menus. Or try the other popular flour manufacturers sites and see what they have too. Enjoy!!
  • I follow my grandmother's recipe and my mms recipe
Make shortcrust pastry, Line an enamel plate dish with pastry reserving enough for a top.
Slice apples, pile in case, add sugar, any amount as it depends on apples, top with pastry,
    brush with milk
    make holes
    cook for 1/2 to 3/4 hour @ 180 oc
    and wallah
a perfect pie delisious to eat !!!!

Hope this helps hun - this is the recipe i follow - although my bf prefers thicker pastry so i just double quantitys but this is the basic recipe!!

    Ingredients
    For the pastry:
    255g/9oz plain flour
    pinch of salt
    140g/5oz hard margarine or butter
    6 tsp cold water

    For the filling:
3 large Bramley cooking apples, chopped, stewed and cooled
    sugar, to taste
    caster sugar, to serve

    Method
    1. Preheat the oven to 200C/400F/Gas 6.
    2. Sieve the flour and salt into a bowl.
    3. Rub in the margarine or butter until the mixture resembles fine breadcrumbs.
    4. Add the cold water to the flour mixture. Using a knife, mix the water into the flour, using your hand to firm up the mixture. The pastry should be of an even colour and suitable consistency for rolling.
    5. Divide the pastry into two halves. Take one half and roll it out so that it is big enough to cover an 20cm/8in enamel or aluminium plate/pie dish etc. Trim the edges with a knife using the edge of the plate as your guide.
    6. Cover the pastry with the stewed apples and sprinkle with sugar to taste.
    7. Roll out the other half of the pastry. Moisten the edge of the bottom layer of pastry and place the second piece on top.
    8. Press down on the pastry edges, making sure that they are properly sealed. Trim off any excess pastry with a knife in a downward motion, again using the plate as your guide.
    9. Flute the edges with a pinching action using your fingers and thumb.
    10. !!!!! the surface of the pastry lightly before placing the pie in the oven. Cook for 20-30 minutes.
    11. When the pie is cooked it should move slightly on the plate when gently shaken.
    12. Slide on to a serving plate, dust with caster sugar and serve.

If you have people coming, a French apple tart looks more impressive than a pie.

Line a flan dish with pasty and bake it blind for about 10 mins at 180°C.

Add a layer of the apple sauce (method above!). Cut some nice neat thin slices of apple and arrange them on the top. Brush the apple slices with melted apricot jam as a glaze, and bake for about 20-25 mins at about 180°C.

It should look something like this:

Here I go again on my own....
