Any ideas what I can batch cook and freeze for hubby for work.

I have done batch cooking for my husband for about 4 0 5 months as he was working in Bristol...Anyway, I have been batch cooking sheperds and cottage pie, pasta dishes that most of the MSE members have suggested, chili con carne,and soups as mentioned also...Sealed Pot Challenge 2012 #1502:)

Pastry doesn't microwave too successfully as it goes soggy, so instead of putting a pie crust on the top, use mashed potato, as with cottage pies. And it doesn't need to be the traditional filling for cottage pies, you could turn bolognese sauce into 'cottage pie' just by adding the mash on top. Rice freezes well but you could ring the changes with chilli and curry by adding mash as the topping. As an alternative try adding softened leeks into the mash or grated cheese.
You can also batch freeze sandwiches/rolls. Cheese and cooked meats freeze particularly well (provided they haven't been frozen beforehand). Don't freeze salad fillings, for obvious reasons. OH can take to work frozen and should be defrosted by lunchtime.
Soup freezes well also.0 -

you want simple?
put a bit of water into a wok (who needs oil if it's a non stick wok)
throw in some meat, lamb, chicken, turkey, pork. beef, mince.. whatever or if he's veggie throw some veggie stuff in there (damn i hated saying that)
chop a pepper and throw that in
chop an onion and throw that in
heat till the meat is cooked but not fully
add a jar of curry sauce in to it (85p at Asda but might be cheaper in other places).
cook till sauce is hot.
Can be served with a jacket spud or microwave rice or chips from the nearest chippy.
Probably do a few servings out of it..
I made a vindaloo yesterday using oooops lamb and left over turkey and it was hotter than a vindaloo from the takeaway so the asda sauce isn't too shabby..
i can give you my chilli recipe if you want, you'll make enough for a fair few meals.0 -
If you're making ones for work I have found some ideal reheat tubs, 10 for £1 in poundland which are same as takeaway ones, ideal for that.
Spag bol and lasagne the easy choices, bolognese sauce for either with pasta, chips, roll or baked potato, chilli con carne is another good over chips/baked potato one, curry , pasta then can add anything like tuna etc, even a roast dinner in a box (usually do mine when doing dinner anyway with left overs) Mince in gravy can be done with a yorkshire, dumpling and as cottage pie so you can make a variety (find this matters) and maybe keep some seperate for over chips or a baked potato.One day I might be more organised...........

I batch make soups (tomato, celery, broccoli, cauliflower and veggie versions) so that we have some variety in our packed lunches. I freeze Irish Soda Bread in one portion sizes. These both reheat nicely in the microwave. The soda bread is already defrosted by lunch time and only needs a few seconds in the microwave.
OH makes lovely wholemeal rolls and is responsible for batching making goulash.
When I cook a meal I always make a bigger batch than we need and freeze the extra in portion sized containers (we've built up a collection of tubs by buying a few each time we go to the supermarket).
Examples of our lunches include:
Bolognese, savoury mince, ratatoui (sp?), chicken curry (mild), sausage casserole, shepherds pie, and irish stew / hotpot variations.
I have part cooked jacket potatoes and these are finished off in the microwave at work (useful if you have a less than portion size leftover to pour over).
I also always make additional potatoes - roast, wedges, boiled and mashed which can be eaten cold (wedges and roasties) or reheated (mashed and boiled).Enjoying an MSE OS life0 -

Pizza is a good idea, but it best eaten cold than trying to reheat it. Maybe a cold bit of pizza and some hot soup.:beer:0
