I use 350g sr flour,175g p flour, 350g Lurpak , 350g caster sugar, 6eggs , 1tsp vanilla extract for an 8" x 3" Madeira and glaze with sugar syrup when it comes out of the oven 140 degrees fan assisted for about 1.5 hours.

It's great for celebration cakes cos it's at it's best after three days:)

It's the extra flour that does it! Do you add any baking powder to the plain flour?

No VHM no baking powder:) but I've started adding a bowl of water in the oven whilst it's baking after reading the tip on Lindys site:)

Littlebit I'd pour water into your tin to see what's it's volume is and then match it to the conversion tool.

Littlebit - I just add enough cocoa powder to add a bit of depth to the taste and colour and also to stiffen it up a bit once the melted chocolate has been added. Usually 2 tbsp to a 500g/1kg mix.

Paula - I did one of pauls courses earlier on this year and it was fab! Hubby got me the online membership for my birthday and I'm doing the graduation cake this weekend. Hope it turns out ok! x

I made a batch of eggless banana bread first thing this morning at my parents - had popped down here to help them with the final stage of refurbishing my old bedroom (it's only been 11 years since they got rid of me! :D).

When my Dad came down for breakfast to find me filling the cake pans, he gave me a biiiiiiig lecture about not wanting to eat any of my cakes any more (ironic as he's the one that eats the lot!), OMG it was like being a teenager again!! So I popped into town to get some chores done, when I came back I made some tea the three of us and heard a small voice ask for some cake....and then for a second helping after consuming a huge wedge of it! Mum and I made him eat some humble pie through convulsive fits of laughter (his not ours).
