  • Another good day eating from the freezer. Finished the last of the reduced burger buns at brunch with blackcurrant conserve on. Most had chicken garlic/herb pasta for tea but I had a pie from my 'pic & mix' Morries reduced bag from bakery. Lush.

    Tonight I made a HM loaf using some of my bread mix from Bigbrands'. Thought it would be nice to have bread and spread for supper, which it was. :D

    Have two small chicken breasts which I want to feed 4 of us tomorrow so I think I'll marinade them in bbq sauce in the morning and make those into wraps with rocket and grilled tomatoes. Will make some wedges to go with them with some spice mix that I bought form Aldis a while back and forgot about.

    Lovely seeing how everyone is making meals from their stores. Such interesting ideas coming through.

    Thanks all for the suggestions for what I can do with the sausage meat I have. I also have a small packet at mum's what I left during Christmas. So more ideas welcome lol.

    Tonight I had my dried M&S veg risotto, with a BBE of July 2011. :eek: It tasted fine of course. Saved some of it to put into a spicy, tomato seafood stewy thing tomorrow as ds is with his dad so I don't have to cater for him.

    Doing the stock check on my cupboards etc, I feel has really helped in planning things. Now it's on my comp I can add and delete things easily.

    Bought a peppercorn sauce today to go with my order that's coming on Thursday, of 30 sausages, 2 steaks, 500g of Australian roasting joint and 500g of mince. Why on earth did I buy that lot.
    There's a storm coming, Mr Johnson. You and your friends better batten down the hatches, because when it hits, you're all gonna wonder how you ever thought you could live so large and leave so little for the rest of us.

    NSD today and well pleased and that's on top of a 10p spend day yesterday!!
    I feel like I'm on the road to recovery and no medication taken or needed!!!!!!

    Toasted teacakes out of freezer for breakfast tomorrow and Viking gammon tomorrow night, probably just snacks throughout the day and get that M&S Xmas cake finished. Got rid of some cheese, pickles and Pringles today. Got rid of some Heroes also. lol

    Lidl "half-price weekend" offers haven't updated yet, so don't know if I'll be going this weekend. Still got a packet of garlic mussels (in freezer) from previous deal to get rid of, possibly Thursday on fish day.

  • Defrosted and cooked three chicken breasts for tea tonight but younger DD said that she didn't want them and asked if she could have boiled pasta. I didn't mind as it left meat for sandwiches for packed lunches so that was okay.

    I boiled some spaghetti and then made up a packet of hollondaise sauce that I found lurking in the cupboard and chucked in a handful of prawns from the freezer and a little bit of the smoked salmon which I just broke off from the frozen side I had and chucked that in too! I seasoned it and added some parsley and Molly said it was one of the nicest teas she has had!! I had a bit of it and I must admit it tasted lovely! Because I had had the pasta I couldn't eat the chicken breast so DD1 had 2 (hollow legs). I did my usual mixing chicken stock cube with a bit of oil and rubbing it all over the breasts before roasting and they were really nice.

    We didn't end up having any afters, so this evening I made up a batch of marzipan muffins with icing and cherries on so we had one of those later on with a cup of tea. Have frozen the rest individually for packed lunches.

    For tomorrow I have chicken for butties for lunches and have taken out a pork fillet for stir fry for tea.

    I need some ideas of what to do with my Kendal mint cake as I am unlikely to be hiking in hilly areas anytime soon and I have had it quite a long time! I thought I might try chocolate mint muffins or chocolate mint tiffin but I'm not sure... all suggestions welcome!

    Another NSD day today:j I do hope that my fees arrive tomorrow though!

    OH has been so good and eating out the freezer while i've been away, he's eaten the easy to cook stuff i buy on offer but we never get round to eating, like pizza and some BE chicken steaks I got for 75p! 1 packet of them left now.

    Hoping for a NSD today, but pup needs more food, i'm not sure if there is enough to last till tomorrow. Managed 3 days whilst i was away though so need to update my sig.

    Confession time, not only did I have a problem with buying lots of food, but also household/cleaning stuff and toiletires etc., etc., - all done via coupons (I blame the coupon thread, but I was eaily led and it was addictive!!) - anyway, nothing really to buy in that department for at least 9 months!! Packs of bulky things like toilet roll packs and kitchen rolls in the loft. lol
    Other problem was buying a few "gadgets", breadmaker, chopping machines etc, again all cheap and some with the Curry's voucher glitch.
    I'm going to use Kirri's tips on breadmaking and try to just make the dough in the machine and bake rolls in the oven - get the breadmaker working again. I normally just use Wright's mixes (always a 30p coupon available).
    The other "gadget" I would like to use is the slow cooker, over a year old now and never even been switched on.
    How do others find slow cookers?? Are they any good?? I normally prefer a pressure cooker.
    Maybe a pork casserole or something to start. Do you lot put everything in at once, or add veg later (when making a casserole)??
    I've always just considered a slow cooker as a "gadget", but should try it at least.

    I also have an Amercian Fridge Freezer full to bursting, and a 10 cubic foot chest freezer that I can't get anything else in.

    I'm considering buying an upright freezer to help me organise my stash, especially now I've found the coupon thread!

    I understand now why you may want freezer No. 3. I don't like chest freezers and prefer "drawers", much more easy to manage I find. If you do get No. 3, the chest freezer could simply become an overflow freezer, stock up on new bargains.
    I bet you would fill a new freezer in a week or so though!!!!

    I need to sort the drawers again, got a little mixed up over Xmas, but not too bad. I need to try and get the next few weeks food together in one drawer, especially the older stuff like dinosaur steaks. :D

    I was thinking of simply grating it over or mixing with vanilla ice cream??

    Lynsey, get using your slow cooker, they're fab! You need to put root veg at the base, like carrots & potatoes. Some people fry onions til they're soft before adding. Meat is put in last, so it's at the top, as it's the quickest to cook. I don't put potatoes in, I choose to do them separately as I find they take a lot longer to cook. There's a big slow cooker thread in Old Style.

    I've created some fab meals in my slow cooker, one of my best was Lamb with apricot, almond and honey, served with cous cous. Also I do a fab and simple carrot, lentil, onion and bacon stew, just add a bit of chicken and veg stock to it.

    My mam uses a pressure cooker and I can't stand the smell. Not sure if it's what she's makes or just a general smell they give off with their style of cooking lol.

    Lynsey, time to fight back against the marketing ploys of the supermarkets maybe go cold turkey and don't shop for a month!! (unless fresh essentials). There will ALWAYS be something on offer next week/month.. I do buy some things when on offer but they are eco/organic/basic items mainly so offers are far less frequent, if I bought 'normal' brands the shops seem heaving with offers. The shops have us where they want us, stocking up, buying more than we need etc..

    Saying that I've got a coupon for Wrights flour in my purse, was going to maybe pick a pack up later just to try it lol - though I usually buy the 1.5kg organic bread flours so will just be a minor diversion this time! Got some dough on the go at the moment, no breakfast for me but hm bread and cheese or soup for lunch.. though I need to find something to do with all the quinoa here..

    The Kendal mint cake is making me laugh, I have only met 1 person who likes it! It might be nice in ice cream, frozen.
