Pineapple Popsicles
Refreshing and delicious on a hot sunny day!
3 cups fresh pineapple chunks, (or one 20 -ounce can chunks packed in its own juice, DRAINED)
1/3 cup milk
1/4 cup sugar
In a food processor, combine pineapple chunks, milk, and sugar; pulse until almost smooth, with some chunks of pineapple remaining. Pour half the mixture into a glass measuring cup for easy pouring.
Pulse remaining mixture until completely smooth; add to mixture in cup.
Divide evenly among Popsicle Molds or paper cups, and insert wooden sticks. Freeze until solid, at least 4 hours or up to 1 week (cover with plastic wrap).

Out of freezer - roast pork - cooked + 2 HM Yorkshire Puddings.
In to freezer - bag of plain flour.
Tonight for dinner we had Huss + Fries - Mr F came home with a bag! + salad dressed with Balsamic vinegar. Cost of dinner for us 2 - £1.46.
I pushed the boat out - had 2 tomatoes in the salad tonight.
Mr F popped to town for the Post Office. He came home with a big bag of tomatoes from a market stall - 50p.
Getting very low on Tartare Sauce.

Florenceem your dinners always look so yummy!!! Can I come round for dinner please?

Hi all and well done to those still keeping up with the challenge!
We have been doing fairly well this week - fajitas to start off with and used up some of the wraps for pack lunches, chicken with leftover sweet potato and spinach which Id pre-cooked and frozen for dinner yesterday and leftovers (poss with salmon as no chicken left!) today !
Bought a little milk to last the next few days but other than that seeing how far into august I can stretch what we already have - will need milk/bread/ ham or some kind of sandwich filling at some point and salad bits if it stays as hot as it has been, but food wise think we have everything else! Have 2 bags of frozen cod and one of salmon in the freezer, plus quorn mince and some quorn chicken pieces plus veg, oh and some of the Richmond meatballs that got cheap with a money off voucher- not the best but edible enough with pasta and veg in a nice sauce! Contemplating Lidl today for bacon/sausages/ketchup although don't really need them so could wait for the next time round...

For dinner we had roast pork - FF + roast potatoes + HM Yorkshire Pudding + stuffing ball + roast onions/pepper/tomatoes.
I made some pastry - baked 2 Cheese/Tomato Quiches.

Your food looks delish as usual Florence. You have certainly encouraged me to get baking again.

I love your 'ins' and 'outs' records, too. Very useful way to keep a check. I hope you'll forgive if I adopt your method.
So.... out - 1 lrg chicken breast
in - stewed rhubarb, 12x HM mince pies.
Today I will have to inventory the freezer/fridge/pantry etc as I am after making savings for my new carpet.
As my food budget includes everything I buy (not just food) its really tight to make savings from it but I'm convinced I can do it. I've just got to be very vigilant for yellow stickers and keep on cooking from scratch without the occasional order in.
Well, maybe very occasionally as a rare treat.

I wish my tomatoes would put a shake on. Can't wait. Everything is behind here. I was late putting things in.
Just done the freezer and fridge list. I am shocked. :eek: I had no idea I had so much meat in my freezer. I'm delighted but stunned. My only excuse being that I'm struggling to get down into the utility with my knee so have been guessing whats there while others do the fetching and carrying.
Still, should make for a very frugal month in August. I just might be able to put a little bit towards my carpet.
