I'm eating out of the freezer and cupboards challenge

Thursday
breakfast - cereal and fruit from cupboard/fridge
lunch - out with a friend
dinner - fish, croquettes and peas from freezer (got rid off one box and one bag)
Friday
breakfast - meusli and fruit (cupboard stocks and fridge)
lunch - scrambled egg on toast (eggs needing used up) for DS and mushrooms on toast for me (leftover mushrooms from wednesday's dinner)
dinner - cold meat and cheese (use up some of the older bits of cheese in fridge), home baked bread (loads off bread flour and yeast). DS2 pasta.0 -

Out of freezer - nothing.
In to freezer - HM Carrot Cake Muffins.
We had HM Shepherd's Pie + Carrots/Onion + LO Baked Beans for dinner.
I made some muffins while I had the oven on. This week I bought a bag of the odd shape carrots - 1.5kg Sainsbugs - 95p
First time using this recipe - very different to my usual Muffin recipe. In the interests of readers - I tested a Muffin - delicious.
I had to substitute some of the ingredients but the result was great - Mr F loved his half of a Muffin.
I will share recipe if anyone wants it. Cost to make 12 Muffins - approx £1. They are a filling Muffin - I suppose because of the added fibre ingredients.

My trouble is that I forget I now live alone and after weightloss surgery cannot eat a lot, so I still tend to buy too many special offers and reduced items. My 3 freezers and 1 fridge freezer are so full that I cannot remember what I have got.
Yesterday (Saturday) I took out of the freezers 4 large venison sausages and a 340gm pork tenderloin, which to my delight I managed to roast it to perfection.:j0 -
^ Wow 4 freezers for 1 person, I think you've joined the right challenge! You could probably stop shopping for the rest of the year with that lot, think how much money you could save! I would sell 3 of the freezers once emptied, would do my head in having that many - even my small freezer on top of my fridge is enough to last me for months!
I've continued not buying anything more than I need for the week ahead, just buying the odd storecupboard ingredient to add to any meal I want to make. Allotment is providing more veg now too, got plenty of courgettes.
Made a big veg curry yesterday, already had some tinned chickpeas in and just bought a tin of toms and used up the veg I already had in. Spare portions went in the freezer for the week ahead. Will make another curry this week to use up a butternut squash and also freeze the portions. If I eat these types of veg/pulses batch cooked meals I'll only really need to cook once a week
plus it's cheap/healthy, though I need to make a few different meals ie chilli, curry, etc to have some variety..
I'm down to only 2 tins in the cupboard now, both condensed milk which are a bit out of date (will turn into cheesecake).
Dried goods cupboard also a bit more streamlined too as I've used a lot of surplus and don't buy so much now.
Still a bit of a way to go before I am happy I really have no excess food in... probably by end of year!
Repairs due to finish on my kitchen soon so be nice to have it all tidy again for once.0 -

There was a few Courgette recipes in the latest morries mag I believe it is online as well.(mum told me this morning)
I swapped my mum some Runner beans for a cucumber I like swapsies:-)
You have done so well reducing and using up I must work harder at it.

^ thanks, I'll try and see online, there's been some really good recipes in it in the past - I prefer to get the copy in store but I don't really go in there anymore.
I don't have beans or cucumbers yet :-( Did get some lettuce from another plot holder though.
Am pleased how much I've used up - am just debating whether to buy dried or tinned chickpeas for my next curry... I've always had tinned in the past but dried are cheaper and supposedly taste better and I'd rather buy things as basic as possible, it's just the extra cooking...0
