Please can I get some inspiration for what to do with Pollack and white potatoes. Friday I cooked pollack in a polenta crust with cubed roast potatoes in a packet of maggi so jucy bbq ribs stuff! Sounds odd but tasted wonderful. I don't want to do this again so soon after the last time. Don't think my other half will appreciate fish pie.

My mother has given me two carrier bags full of rhubarb so into the freezer that will all go! I would make rhubarb jam but I think I would be the only one eating it.

Kirri that griddled beetroot sounds like my kind if thing.

Just had 2 clems for breakfast, I'm having a Waitrose chicken ceasar salad for lunch and dinner will be a home made salad, just need to go and get a few bits, I'm in a salad kind of mood, although I do have broccoli, green beans and carrots to use up, so I might steam them and put in ice water, then add them to salad and just grate the carrot, i need to buy sweetcorn and lettuce, I have croutons and i bougt a massive whoopsie loaf yesterday, which should last the week 2.84 down to 54p, think im going to try a lot of salads this week, It's too hot to cook and I only have 1 ready meal in the freezer, so i Deffo need to do some batch cooking.

    Hope everyone is well.

    Me again! Lol

Been to Waitrose, got 3 packs of stewing beef usually 4 quid, 3 packs of new potatoes and a lettuce £3.56 love those multibuys.

Also bought some strawberries and ice lolly moulds, used a bit of elderflower and Apple cordial, water and 2 teaspoons of honey, whizzed I. The blender, now have some lollies in the freezer, also used up a bag of potatoes I bought last week, there now steaming in garlic powder, pepper and salt, bought some tins of Sweetcorn, those will be added to my salad along with a tuna sweetcorn and mayo mix, grated carrot and whatever else I find in the fridge, will also have a hunk of bread.

I'm going to make my own croutons tomorrow, off to Google a receipe.

^ There's a nice looking raspberry ripple lolly recipe in the Waitrose weekend mag.

Horrible dinner using up the hm frozen polenta chips, I don't think I can eat the rest of the batch! I have another 2 large portions in the freezer :( I can eat most things but it really isn't pleasant (next time I get some citrus fruit the rest of the polenta is going in a cake).

Had bit of baba ganoush before it's out of date, couple of bits of toast and heated some tomatoes, garlic and basil in a pan to go with the polenta. Not really a proper dinner, just a mix of leftovers, as am really skint.

Out of freezer - just some peas for dinner.
In to freezer - HM Quiche.
Had my DGS here after School. He helped me to use the pastry I made yesterday. We made 2 Egg/Cheese Quiches and a Jam Tart. The leftover pastry was used to make a jam turnover which DGS took home with him.
Dinner was Rice + peas + onion and some Quiche.
I used some Single Cream from the freezer - was fine in the Quiche instead of milk. The cream was not suitable for use as is.

Tonights dinner is pizza which will consist of cupboard ingredients (flour oil sugar) and hopefully I can just use the tomato base from the freezer along with left over cooked mince, frozen mushrooms, frozen grated cheese and mozzy cheese and I've told sister in law she has to buy her own pepperoni!

For pudding is banana flapjack, yes I bought the bananas but they were 10pence as they were almost completely black

I also made a banana cake last night after the flapjack.

So tonights dinner is going to be pork chops from the freezer, been in there for a couple of months. My other half works at the co op but I don't usually buy from there, I purely go in because they often have meat discounted (entire shelf) and then I get a ten percent discount on top of that so I can often get good quality meat discounted to less than if I went to a butchers. But it can vary as to what is there. Also having smart price chips from the freezer.

I then need to cook the last of my 7.5kg bag of potatoes and mash and freeze. Have been doing this every night to get them frozen before they go green on me. Once I have cleared space I need to make chocolate cake and freeze that but don't think I will have the space for a couple of weeks.

Oh and I have also spent money on approved food as I noticed we didn't have any pasta left. Whilst I am trying to eat from the cupboard, I can't have bolognese from the freezer without pasta! And I got a good deal. I also bought a 4.5kg tin of tomato paste for £1. That is obviously a large amount but will freeze in icecube trays because I use tomato paste when making my toddlers dinners and also good for sprucing up a bolognese etc.
    Money money money.
