    In to freezer - nothing.
    Out of freezer - 2 bits JJ's Herby Cheese Bread + tub of HM Veggie Pie.
    Dinner was - LO jacket potatoes roasted off in chunks with LO roasted veggies + HM quiche.

    For tea, Waldorf Soup, following a HFW recipe

    but without the cream. Recommended! Very tasty - the addition of the walnuts and apple at the end makes a heck of a difference.

    Plus enough left over for three portions into the freezer.

    Total cost around £2.60.

    In to freezer - 1 cooked chicken portion.
    Out of freezer - 2 HM Muffins.
    We had Barbecue chicken with roast potatoes + stuffing ball + carrots + onions for dinner.

    Leftover I think? (though I always say LO as LOW when I'm reading it more like some weightwatchers type thing and worse I read it as LOW TITH instead of leftover toad in the hole..).

    and welcome back Lip_Stick, thought you'd had such a lovely time with the ex you'd been too busy to come back :rotfl: as long as DS enjoyed the hol though, hope it was bearable!

    Been using up bits and pieces here, mainly hm frozen meals, gaps appearing in freezer. Once I've emptied the freezer I may batch cook some things like veg curry etc for when I can't be bothered to cook.

    Food delivery this week - was horrible going to the shops last week :eek:

    The Inside-Out Burger

    Ingredients:
    • Log of goat's cheese
    • 1 clove of garlic
    • Minced beef (800g)
    • 2 dollops of caramelised onion chutney
    • Tsp Dijon mustard
    • Tsp salt
    • Tsp black pepper
    • 2 dollops of sundried tomato pesto
    • 2 dollops of mayonnaise
    • 4 ciabatta buns
    • Small bag of rocket leaves

    • CUT the goat's cheese into four thumb-sized chunks.
    • PEEL and grate the garlic.
    • COMBINE the beef with the garlic, onion chutney, mustard and salt and pepper.
    • FORM into four heaps, and mould into burger shapes.
    • POKE a hole in the centre of each burger and stuff in a piece of the cheese.
    • SQUEEZE the meat over the top to seal the cheese in.
    • PUT the burger on to the BBQ and cook on both sides until the outside is charred and the inside is cooked through. This will take about 15 minutes, depending on the temp of the coals.
    • MIX the pesto and mayonnaise together.
    • SLICE the ciabatta in half lengthways and put on to the BBQ to colour it a little.
    • SMOTHER the bottom layer of the ciabatta with the pesto mayonnaise and top with the burger, rocket and the top of the ciabatta.

    LO - left over.
    I forgot to say - took a load of free fish out of the freezer last night. We were given the fish by an enthusiastic young fisherman. :money:
    So while the oven was on - cooked the fish. I undercooked it - now it will go in the freezer - apart from some left out for tomorrow's dinner. Then I will warm it up/finish the cooking on the day we eat it. Enough fish for 6 day's meals. :j
    For dinner we had HM veggie pie + carrots + onions + rice.

    In truth I nipped back on here to see if you were still posting pics of your food each day but while I'm here I should really join in again as my freezer is stuffed to bursting with bargains again.
    I'm being a terror and still buying when I need to be saving. :o
    When I roasted veggies - cooked extra - when they were cold - put in tub in fridge. I roasted chopped up beetroot - Al.. with some tomatoes and onions in oil and balsamic vinegar. Made Shortcrust pastry - lined a pie plate - heaped in the veggies and put on a pastry lid. Brushed with milk and baked for about 30 minutes - 190 - ovens vary. Easy, filling, economical, tasty pie. I make my pastry with Trex - I think that is for vegetarians as well.
