It's also possible to make sourdough loaves in a BM without having to do all the kneading etc. In fact I'm just munching on a yummy slice of BM sourdough bread just now!
I put all the ingredients in the BM and use the "french bread" dough programme (which takes 3 1/2 hours) then let the dough sit (in the pan, in the bread maker) for at least another 6 or 7 hours and then use the "bake only" programme for 55 minutes. So I usually set the dough programme up before I leave for work and then when I get home in the evening I do the bake programme. It works brilliantly!0 -
I got some 'McDougalls' catering packs of White roll and bread mix from Approved Foods. I think they were a stupid price like £1.99 for 3 x 3kg. I use 450ml water, 750g bread mix and a sachet of yeast. I mix and do the first prooving in the BM, then put it in a Pullman tin, without the top on, and prove it in my combi m/wave for 50 mins @40 degrees, then bake for 25 mins@ 230 degrees.Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.0

Val, i personally do use half and half, as for me it is cheaper than all strong white bread flour. Its cheaper as sainsbugs is the nearest supermarket to me, in there the flour as last look was oiver a £1 for 1.5kg.
the recipe i use is also good for me healthwise as i can tolerate it better than other bread recipes or i'm in agony with full wheat bread.0 -
Merry Christmas, I have just been to farmers market and bought a "Butterlump" loaf. I understand it is made with lumps of butter in the dough before cooking. Would this be so? Do you know? I use my old, free Swan BM, no longer made but managed to get a manual from co. which took over. I have started to cook to the dough stage and then put in oven, still experimenting and I use Wrights bread mixes usually. And have used their cake mixes too. Thanks
