Finely sliced potatoes and onions in layers in a dish, cover with cheese sauce, and a sprinkle of cheese. Bacon layered in if you have it. Cook on medium micro for 20 mins to get it started then an hour in a medium oven to finish it off and crisp up the top.
Think I mentioned it before, but worth mentioning again. If you are not good at making sauces, or CBA, use condensed tomato or mushroom soup, diluted (works better than ordinary soup as it's better quality.)

I put this together from leftovers but no reason it couldn't be done for a meal.

Makes medium portion for 4 or large portion for 2

Make mashed potato (use 2 large potatoes or 3 fist size), add a tin of cheap baked beans and mix through on a low heat, add half a mug of gravy (can use beef/chicken/veg gravy powder). Mix through, making sure its heated through.

It does look strange but it tastes great!

    50p. That much?

GARLIC & OIL PASTA SAUCE (AGLIO E OLIO)

    Sometimes, less is more.

    Enough for pasta for 2

    INGREDIENTS

    2 cloves of garlic
    2 tablespoons of olive oil

    METHOD

Peel the garlic and cut it into thin slices.

Put the oil into a frying pan on a moderate heat. Add the garlic. Fry the garlic for about 5 minutes until it is golden brown. Stir frequently to stop it sticking.

    Remove the garlic slices.

Toss some plain boiled pasta in the garlic flavoured oil. Serve immediately.

    ADDITIONS & ALTERNATIVES

Add 1 tablespoon of lemon juice.

Add 25g per person of fresh parsley. Wash, shake dry and finely chop the parsley. Add the parsley just before serving.

For Aglio e Olio Pepperoncino, add ½ a teaspoon per person of chilli flakes.

PS. I have seen Aglio e Olio Pepperoncino on a restaurant menu for £8.50!

1 packet of ASDA meatfree bolognese (similar to beanfeast) 65p
    1 tin chopped tomatoes 31p
    1 tin Mexican beans 53p
1 pack of long grain smart price rice 40p

Make up the bolognese pack as stated adding the tomatoes and beans, add chilli powder/ chilli flakes or Tabasco from your cupboard and simmer for time stated on pack of the beanfeast style stuff.

Boil rice for 15-20 mins and serve chilli and rice.

Serves 4 at around 47p per portion. To make it cheaper still swap mexican beans for smart price baked beans (26p) or red kidney beans (27p) this will make the meal approx 41p per serving.
  • thanks everyone for this thread. My favourite snack/lunch is "fake" tinned pasta.
1 value stock cube (2xpacks of 8 Kallo cubes for £1 from approved food)6p
    1 tbsp tomato puree 34p a tube
    1 clove garlic around 10p a bulb
vermicelli pasta, orzo pasta or any other tiny shapes (got 2 x 500g packs for £1 of this from Approved Food) 1 cup (around 25p)
shove all ingredients in a pan, add boiling water and bring to boil, stir and leave for 10 min or until pasta cooked, add either chilli powder, paprika, home grown coriander or parsley if you have it in. I sometimes add in chopped onion to this recipe too. and dip bread in to make it more substantial.
I'm not the world's best cook but turkish people use lots of variations on this recipe, its called arpa corbasi or "orzo soup". Depending on the tomato puree-water ratio it can be either a soup or a tinned spagetti style consistency. hth

The other one is dried noodles, stock cube and frozen peas to make a cheap quick broth.

My version of "spag carbonara". Boil enough spaghetti for two people. At the same time take at least one rasher of bacon (per person - and streaky is perfectly fine for this) and cut into small bits (using scissors) max size 1 cm long and fry in a pan with a few tbsp of oil.

Whisk one egg per person in a bowl.

When the spaghetti is ready, drained and returned to its bowl, and the bacon is fried good and proper, pour the con. tents of the frying pan into the spaghetti. Immediately pour the whisked egg into the mixture and mix thoroughly and leave the mix to cook in its own heat for at least two minutes.

Add as much grated parmesan as you like and black pepper to taste.

Add cream to the egg if you're a purist!

Okay it's not real spag carb but it's quick, cheap and very simple (and tasty) .

  • Lots of great idea's here, thanks :)

I do cheesy pasta with sweetcorn a lot, my son loves it and it's so quick and easy, a basic cheese sauce with a 1/4 block of strong cheddar (25p I use those blocks from Iceland) with value pasta, I got bags and bags of the stuff at 9p for 500g last year and I still have about 10 to use, half a bag and some frozen sweetcorn added in, I normally make enough for 2 days with this so pretty cheap.

We only eat chicken or sausages/bacon and I rarely buy it full priced, I buy it when reduced, just the other day I got 4 thighs for £1 which will do 2 meals (for 2) serve with rice or pasta and any veg cheap and tasty.

I rarely cook a meal that cost more than £1 for both of us, it's just how it works out. Puddings are generally fruit/yoghurt here. We picked strawberries yesterday so had those with a bit of cream and sprinkles, yummy and pretty healthy with just a dash of cream.

Chicken and sweetcorn soup is another I do, onions or leeks (I buy them reduced or whilst at £1 for 5 big leeks), a bag of frozen sweetcorn (value £1) stock either from chicken carcass or I use a mix or veg and chicken stock. I normally do a couple of onions, half bag of corn, few carrots and maybe 3 stock cubes. This makes enough for a weeks worth of lunches and costs barely anything.

I rarely buy bread full price, I tend to buy it heavily reduced and then freeze. I just don;t see the point in spending full price when if possible you can buy in advance and freeze. It's not always possible to buy reduced I understand but if you can the cost of meals are pushed way down.
