Hi all
think it was Pippi whos asked about yoghurt cake in all its variants so here it is
``Yoghurt Cake
1 carton (approx 150g) yoghurt
2 cartons caster sugar
3 cartons self raising flour
1 carton sunflower oil
3 eggs
Method Beat all the ingredients together with an electric whisk until smooth (or use a fork or hand whisk). Line a loaf tin, pour in and bake for 1 1/2 hours at 160 oc, gas mark 3 for 1 1/2 hours. Adjust for fan assisted oven to 150 oc for about an hour.
I think it would have to be a big loaf tin as I usually make 2 cakes in smaller loaf tins especially if I've added fruit or cherries.
I’ve done this with fruit yoghurt, Black Cherry probably worked best because of stronger taste.
For all the variants listed below the original recipe mentioned Vanilla essence but I’ve found the best way is to buy vanilla yoghurt instead. I've also since done it with Just natural yoghurt and it was fine.
Variants
Chocolate added 2 level table spoons of cocoa powder
Lemon curd 3 desert spoons (about ½ jar of cheapo lemon curd)
Orange marmalade as lemon curd ,used shredless marmalade
Coffee 2tsps of instant coffee dissolved in Just enough water to allow it to dissolve (about level tbs ) and allow to cool before adding
Fruit add sultanas or whatever you have/fancy. Thinking of adding some Cinnamon next time
I've also made a 'plain' cake, natural rather than fruit yoghurt but put glace cherries in.
Makes a delicious moist cake0 -
think i may have a go at your cake i've bought some coconut yogurt and i'll bet that will make a fab cake.
with the lemon curd to you add that as well as the yogurt? having a thicko moment0 -
Hi LT
I've added Lemon curd as well as yoghurt but tend to look at it before I pour it into the tins and decide whther it 'looks right'. If a bit runny I've added some more flour. Hope this helps0 -
Just remembered if you search mrbadexample's threads he's got a really nice looking recipe for streusel cake!0

made the cake Greenval, using coconut yoghurt, with some added coconut. It's yummy if a little sweet, not sure if it's the added coconut or whether i need to put less sugar in next time. But OH loves it. Isn't it weird that the thing that bothered me the most wasn't the yoghurt it was putting oil in it. But it did work0
