Tunis cake anyone?

My Mum and Dad remember having Tunis cake at Christmas as a child. Mum asked me if you can still buy it but I can't see it in any of the supermarkets.

Has anyone seen it anywhere or anyone made one at all?

Any recipes or info would be greatly appreciated.

    Ingredients

    8oz self raising flour
    6oz softened butter
    6oz castor sugar
    4oz ground almonds
    1 lemon juice, and rind
    3 eggs

    for the topping:
    plenty of good quality chocolate
    6 marzipan fruits
    (see measure conversions for more information)





    Method

    - Place the butter and sugar in a mixing bowl and beat until pale.
    - Add the eggs, flour, lemon juice, lemon rind and ground almonds, mixing thoroughly.
    - Place the mixture into a 8in greased and floured cake tin and bake in a preheated oven at 150oC/300oF/gas mark 2 for one hour or until springy in the middle when pressed.
    - Leave on a wire rack to cool.
    - To decorate the cake, wrap some greased proof paper around the sides of the cake, standing proud of the top, securing this with a piece of string.
    - Pour over the melted chocolate, when set remove the greaseproof and the chocolate shouldn't have run down the sides of the cake.
    - There should be a good covering of chocolate on the cake.
    - Once completely set, place the marzipan fruits on the top.

    they buy it at tesco,only place i've seen them at in recent years.

    i did have a recipie too,will see if i can dig it out.

    That sounds lovely, might have to try that as not all the family like Christmas cake.

    yep tesco is the only place I saw them last year ... much smaller than the ones we had when I was a kid. I haven't noticed any in there yet this year though:rolleyes:

    I looked on the Tesco website when I was doing my shop and they didn't have it!

    My Mum said they used to have it every year and it had an inch thick layer of really nice dark chocolate on top. (mmmm) They had it once about 5 years ago and there was barely any chocolate and it was a really soft cheap chocolate flavour - not how she remembered it at all!

    Looks like I might have to try and bake one for her. Do you think that I would just have to buy something like bournville and pour it on the top. Also how on earth do you tie the string round the greaseprooof paper tight enought for the chocolate to stay on the top and the cake not to be split by the string????!!

    I would not spoil it with Cadburys excuse for chocolate.

    Use one with proper chocolate ingredients in it.
    I used to be indecisive but now I am not sure.

    I'd never heard of Tunis cake before reading this thread.

    However, I was talking about Christmas cakes with a friend and she said she marzipans her cake and then covers it in melted chocolate. She said she got the idea from cakes she'd seen in Tesco.

    I thought this sounded wonderful and decided to do the same with my cake this year. I've made an orange and ginger cake which I'm feeding with Cointreau. I think it will be lush covered in Green and Blacks.
