  • If you cook your turkey upside down and just turn it over for the last 30-40 mins it will be really moist as all of the fat is in the underside of the turkey so will seep through the breast to escape.

    thought I would mention as a lot of people are saying they are not keen on turkey and I was the same until I tried this.

    Parma ham for starters

    roast pheasant with veggies from the allotment (roast squash, celeriac, parsnips, potatoes), baked red cabbage and kale

    then its either summer pudding using frozen home-grown raspberries, blackberries etc, or chocolate bread and butter pudding (thank you Delia!)

    Home made mince pies will also make an appearance. Oh, and probably just a drop of wine...
  • my first year cooking xmas dinner but im still doing the full works:

    prawn cocktail starter/maybe melon for oh

    boned and rolled turkey wrapped in bacon - from butcher
    roast potatoes
    roast parsnips
    carrots
    brocolli
    cauli
    brussel sprouts
    cabbage
    stuffing
    sausages in bacon
    yorkshires

    washed down with some sparkiling wine/fizzy water for kids

    some luscious pudding for desert probably made of chcocloate

    i'm soo hungry now after writing that
    Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts :heart:
  • Hmmm it is usually garlic stuffed beef but i have a duck and a turkey in the freezer - did fancy a bird mix but my oven is on it's last legs and i doubt that it could cope with three birds - so probably the beef again ;-(

    With mashed potatoes whisked with double cream and topped with grated nutmeg, Dutch roast potatoes, caramelised carrots, 2 sprouts, parsnips, Gordon Ramseys real gravy and whatever else i can find to add to it.

    Hmm usually have avacado with prawns to start - have placed my xmas online shop so it's definately avacados again.

    usually have profiteroles/trifle/xmas pudding selection

    coffee & mints

    Loads of wine including a desert wine but i already drank that.

    It usually all takes a few hours to eat and we do generally go away from the table for a while then return to it again.

    For the evening i just add a plate of cheese and biscuits with fruit and more wine.

    I am considering doing Xmas dinner on Xmas eve 'cause i spend too long cooking and would rather spend the time playing with the kids.

    smoked salmon or melon to start

    then Norfolk black turkey - kind of a peppery flavour to it and much more interesting than a bronze - stuffed with cocktail sausages and my mum's home made sage and onion stuffing
    roast spud and roast root veg
    sprouts (it wouldn't be Christmas without)
    peas
    apple sauce
    gravy

    followed by Christmas pud for those that like it or something like pannecotta for the rest of us

  • Christmas is coming, the goose is getting fat...

    No starter for us coz we'll have all stuffed our faces with chocolate from the selection packs during the morning, then...

    We're having goose and all the traditional trimmings. I use the fat from the goose to roast my tatties... gorgeous!

    Having not had a starter means there's plenty of room for Christmas pud, which may turn out like a round ball or will probably look squatty and fall apart before it reaches the table and lashings of cream to go with it.

    Yummy!

    If you've never had goose and you don't like the dark meat on turkey then goose is not for you.
  • It's only my second time cooking -last year it was just the two of us but this year my parents and my brother and his girlfriend are coming - I'm really looking forward to it, should be lots of fun!

    We're having:

    Starter: Scallops in parsley & vermouth sauce
    Main: Goose, roasties done in the goose fat, roast parsnips, sprouts, carrots, peas, sage & onion stuffing, lemon and celery stuffing, garlic & walnut stuffing, orange & cranberry stuffing (all stuffings lovingly prepared by Mama!), sausages in bacon, cranberry and apple sauces
    Pudding: Christmas pudding with cognac cream (which everyone will attempt but will probably mostly end up in the bin).

    I've never cooked goose before but Lidl are doing them for £12.99 a pop so I thought I'd give it a go, I'm having a practice run this weekend - wish me luck!

    For Christmas Lunch I will be cooking

    Cauli/Broccoli/Carrots
    Yorkshire Pudding
    Stuffing
    Gravy

    We probably won't get round to the Pudding but if we do it will most likely be about 10pm. We all have Christmas pudding and Custard except for my son who will have Mince pies instead.

    A few years ago, my sister and I (vegetarians and fed up with traditional Christmas dinner) decided to opt for a Mexican meal which was:

    Tortilla Chips with Salsa

    Veggie Chilli & Rice

    Profiteroles (ok, not Mexican, but delicious!!)

    My mum's friend always gave her family (hubby & 4 children)the choice of what to have. This meant that every year she was cooking 5 meals as she and hubby ate the same. Ok, this was a palava, but it was the only day of the year they got to choose, cos to be able to choose on Christmas day they HAD to eat whatever she cooked all year! It has been known for her to cook fish fingers and beef burgers!!!

    I'm cooking for hubby's family for the first time this year and we're having

    Quorn Roast
    Yorkshire Pud
    Roast Pots
    Roast Parsnips
    Stuffing
    Carrots
    Brussels
    Mushy Peas
    Gravy
    Cranberry Sauce

    Individual Christmas Puddings and Custard
