Apps tend to synchronise so they're always up-to date when you look at them (e.g. News & Weather, Facebook, Twitter). For the majority of apps, you can specify how often you want them to sync.

I use switchpro to either have everything on or off rather than do it at the individual app level.

My favorite free app is the We7 app. It automatically downloads music to your phone based on a genre, artist, album, etc when connected to wifi. Then let you listen to it when out and about without incurring data charges.
