    Hi hypno - am not fully up to date with your diary as i save my catch ups for the weekend when i *sometimes* have a bit more time for things :) But from what i can gather you are looking forward to your hols which i am sure will be an amazing trip :T

    I wanted to pop on and ask if you'd mind posting up the vegetable curry recipe you mentioned? - i take it it'll be ok to freeze too :) and if you have any other suggestions for things i can batch cook i will be very grateful :D - Food is definitely an area where i am wasting money and its also one of the few items i can actually cut back on so if i have tasty food then this should help curb those unnecessary spends :)

    Hope all is well with everyone else - as i said i've not read back as yet but aim to be up to date this weekend :D

    There is no "standard" recipe for my veggie curry.....but it goes along the lines of:

    Use any veggies that you like, or have leftover in the fridge. Ideally, if you are slowcooking the curry, as I do, they need to be "firm" veggies so that you don't end up with a currified soup! I use cauli, potatoes, carrots, onions, but also chuck in stuff like peppers, mushrooms, that remaining half of a courgette that's lurking.....that type of thing. Also, if you are so inclined, you can throw in a tin of chickpeas, but I generally don't bother. You can also use frozen veg, such as a handful of peas, but I prefer using non frozen cauli etc because they go less mushy.

    chuck all the chopped veggies into the slowcooker with a tin of value chopped tomatoes, and either a couple of teaspoons (to taste, of course) of your favourite ready mixed curry spices, or if you have the urge to grind your own mix you can do so.

    And basically, just let it do its thing for several hours, until the carrots and potatoes are cooked through. No need to add any additional liquid because the steam from the slow cooker will provide all you need.

    The flavours are amazing in a slow cooked curry, and they are even better second time round.

    Just before serving, if you like a creamier curry, or if the sauce is a little too spicy, stir in some creme fraiche, natural yoghurt or cream (sour or regular).....whatever is in the fridge, really!

    Also, if you find (unlikely) that the sauce is a little too watery, you can add a spoonful or two of ground almonds.....yum yum yum!

    It really is that simple - and freezable too. Also, very good for anyone following WW or slimming world etc as very low in fat.

    Woohoo - was struggling with tiredness today and as work was very quiet they asked if anyone wanted to take a days hols - so back home i am :D for now! And.... the curry is in the slow cooker doing its thing :) - at least i hope its a curry - there was a tub of unlabelled spices in the spice storage - so that got thrown in, along with some freshly picked garlic :) new potatoes, sweet potatoes - sadly the carrots didn't make it :o ooh got some peppers in there and onions too - i actually put 2 tins of toms in to eek it out a bit more :)

    Now got chickpeas on my shopping list - can i add these later in the cooking process (they'll still get 2 hours) or do they have to go in at the start ? :)

    Thank you soo much hypno :T:T:T i love potatoes and OH doesn't so these are something that can often get thrown out :o with this recipe if it looks like there's going to be a bit of veg left at the end of the week i'll throw one of these together :D Oh and for some reason i have no tomato puree in - i love tomato puree - so will get some of that later and squirt some into the curry :)

    The one ingredient that i have frozen and didn't add was sprouts! i got some very cheap once and proceeded to freeze them - apparently they are very strongly sprout tasting - so have been a bit put off trying any for now and didn't want to ruin the curry with them either - it made me think of your tin of sprouts when i opened the freezer door and said 'no sprouts, its not your turn... yet':rotfl::rotfl::rotfl:

    Hey that curry sounds Yum and I make one in much the same way, it is the easiest and most favourite meal in this household (I have been known to put sprouts in too but then I love sprouts). With the chickpeas, if it is a tin of chickpeas you should be fine to throw them in. If they are dried then I would be a bit wary of just throwing them into the curry, need soaking and then boiling before using them. Some say that you can rapid boil for 10 minutes and then cook but I find that they are not as nice then.

    Well done on not making excuses to not go out. That has to be one of the hardest things to learn as a new singleton and debt free diva but keep it up!

    The longer the chickpeas have, the better - but tinned ones should be ok if you add them in a bit later.

    As for the sprouts - just DON'T go there. Curried Sprouts? :eek:

    In spendy news today I bought a floaty chiffony dress in the phase eight sale to wear to a formal dinner tomorrow - very lovely and very bargainous. Black (of course), and knee length so will get more than its fair share of use at various events.
