MealPlans WB 27 March 2011

Hello all,

I was off meal planning last week as we were in Scotland for a wedding. Of course that’s where all my money went so its urgent to stick to the plan until payday!

My dad is here visiting from America, so feeding an extra mouth and eating out more than normal. Luckily he is vegetarian and no one in our house ever cooked much, so he's happy with anything I can rustle up.

Tonight - Aubergine pasta sauce and spaghetti - will buy posh bread to dip in oil and vinegar on my way home
Friday - out, have drinks in the bar at the Gherkin and will probably have a pub meal after
Saturday - HM pizza (dough in freezer)
Sunday - probably out as well - if not, Moroccan spiced aubergine with Greek yoghurt
Monday - Chilli (from freezer) with jacket spuds
Tuesday - pasta pesto w/ veg
Wednesday - Shakshuka

For lunches we have leftover frittata from last night and carrot and coriander soup from the freezer.

Looking forward to seeing everyones plans!

    Chicken Traybake? EEEeeeeeeuuuuuuwwwww!

I do apple and raspberry traybake, brownies etc, but the thought of chicken in sponge doesn't really appeal.

Obviously I realise it's actually a savoury creation, so could you share? We live off chicken due to trying to trim down a little so all variety is appreciated.

    Hi all,

i have decided to post this week as i really need to start using up all of the things in my cabinets and freezer due to increased bills!! I have lots at the moment and have done a spreadsheet (sad i know!) with meal plans for the next 4 weeks so that i only have to buy very little. Weekends help a bit as we stay in London with our families but it doesn't always help with the money saving!! So here is my plan for next week:

Tonight - out with work and work paying
Friday - staying in London so not sure yet
Saturday - my birthday :D so out for a curry
Sunday - still in London so dinner with one of our parents
Monday - quick cook pasta and chopped tomatos (i don't get home until Monday so need something that isn't in the freezer and won't go off over the weekend!)
Tuesday - Peppered steak casserole with mash, greens, beans and carrots
Wednesday - Corned beef hash with baked beans and greens
Thursday - Pasties made with left over Peppered steak, not sure what to serve it with though as haven't done pasties before!!

Hope everyone has a good weekend! :)

Another week rolls around - it hardly seems any time since I posted my last menu. I happily discovered this week that my parsnips which I should have dug up a month or two ago (difficcult with 18" of snow over them or ground hard frozen) are still OK. I was a bit dubious cos when I came to peel one last night it looked very old and faded but just under the skin it was beautiful - nicer than any parsnip I've bought for ages - and it tasted delicious too.

    S. sardines on toast, salad
    S. felafel, hummous, pitta, salad
    M. devilled chicken, rice, mustard sauce, spinach, parsnip
    T. something with sausage meat from the recent thread
    W. fishcakes, grilled tomatoes, spicy parsnip
    T. savoury lamb pasties, gravy, broccoli, carrots
    F. leeks lucullus with a small bacon steak

It really isn't what you think it is....

Idea nicked of Nigella for a quickish mid-week roast. Chicken pieces, potatoes (don't have to be peeled, just washed and quartered plus veg all put in one laver in the same roasting tin (use root veg, onions, peppers, courgettes, butternut squash, tomatoes - anything you have really, just not green veg such as broccolli etc...) add lemon wedges if you like, fresh herbs if you have them, plenty of seasoning and a good glug of olive oil - mix it all up together and bung in the oven for an hour until cooked.
