How about slicing up some onions into a casserole dish add a pinch of dried sage, a drop of water..put your pork chops on top, cover tightly and shove in the oven...cook long and slow andthe pork chops will just drop off the bone.. remove the pork towards the end ad your gravy granules to the onions..put the pork back on and put back in the oven...
you could always add chunks of carrot etc at the begining...it is sooo tasty...and you get the stuffing flavour without the hassel or extra calories etc... if you dont want potatoes how about a chunk of bread ...

No brainer. Slap-up mixed grill: pork chop, decent sausages, bacon, tomatoes, eggs, oven chips. Its not that bad for you, honest.

I like to season the chops with salt and pepper, and a little bit of wholegrain mustard, then fry them off a bit (just to colour them). I put them in a casserole and then in the same pan just gently fry off a couple of bramley apples, which I cut into big chunks, usually eighths. I add a little bit more mustard too, and some chopped fresh sage if I've got any. Then I put the apples on top of the pork, deglaze the pan with some rough cider (enough to cover the pork) and pour this over the chops. Cover and bake for an hour or so, and then take the lid off and cook for another half-hour(ish) until the chops are really tender. It's delicious with mash and greens.

This is a tasty dry rub for pork chops...

Bash up fennel seeds, black peppercorns, salt, and dried red chillies with a mortar and pestle. Quantities are guesswork, but I use more fennel seeds than the other ingredients - the amount of chilli is personal taste.

Serve with jacket spud and salad, or saute potatoes and veg. Yummmm.

This is something similar to a Jamie Oliver rub someone bought me once, and I've since made my own. Very cheap to make a big batch and it keeps for ages.
