    What do you stuff 'em with? (so to speak!) I'm also a mushroom fan! But I bulk out anything made with mince using grated carrot or lentils... once they're cooked you can't tell the difference, although Mr MRN commented on orange cottage pie the other night!

    There are a couple of options I use for stuffing mushrooms:

    1. Three cheese and onion: cut the mushroom stalks off and chop finely, chop the spring onion finely too then fry in a little oil or butter. Then mix with cheese, I usually use garlic cream cheese and cheddar and then stuff the mushrooms - then top with a little grated parmesan. I sometimes add a little chopped bacon to the mushroom stalks when frying - depends what I have knocking about the fridge.

    2. Herby breadcrumbs: Again chop the stalks, some onion and some garlic and fry. Whizz up some bread to make breadcrumb - mix together and add whatever herbs you have got around - fresh or dried to your taste. Stuff the mushrooms and then top with a bit of cheese (cheddar or parmesan) if you like.

    Bake in the oven for 15 mins at 200 deg C.

    Well what a weekend! They did spring a surprise on me on Saturday and I had a very nice party down my MILs house with lots of friends and family.:j

    DH had bought all the food and had gone a little overboard so have quite a few LOs to use up. So todays lunch is LO ham with LO salad in sandwiches....

    I have been informed by DH that I shouldn't save my Birthday money - but go out and buy myself something nice. I have allocated £25 to the mortgage already and plan to put £35 into my savings - the rest, I will spend under his instructions - just got to find something nice - maybe a pair of boots in the sale...!!!!;)

    Quite productive on Saturday morning:

    - wrote 2 birthday cards (posted 1)
    - send my sorm back to NS&I for online management of accounts
    - sent back confirmation of my details to the local neighbourhood partnership I am a member of (free draw for £25 of supermaket vouchers!)
    - opened my new on-line isa (finally), just waiting for confirmation and then I can deposit some funds before 05 April
    - cleaned the house and sorted out recycling, shredding and filed paperwork (though that pile is still sitting on my dressing table!)
    - did 2 loads of washing and put bath mats ready for washing on Sunday

    It appears that I am starting to getting a bit organised (don't want to speak too soon), and I am starting to feel better about things - maybe its the lighter nights and the (slightly) better weather.

    Very quick update today as taking Dad for his eye operation this afternoon and have loads to do at work before I go.

    Grocery spends stand at £143.07(ish - from memory).

    New on-line ISA application has gone though and should be ready to receive funds in a couple of days.

    Crab Spaghetti was really nice:)

    Pork Meatballs with Chipotle Tomato Sauce tonight (meatballs from the freezer from previous meal).

    Freezer still does not seem to be emptying evn though most of our meals are coming out of it. I suppose it will be one of these things where its SUDDENLY empty!

    Hey LP...went fine thanks...well as far as we know so far.

    The biggest thing that is helping the grocery spend this month is all the food we have in the freezer that I am trying to use up so I can defrost it! (Trying being the word!)

    Also, don't forget that there are only 2 of us and a cat! Our budget is approx £200 per month normally and I like to cook - I know that is not always the case with everyone.

    Update on the Grocery spends - my memory was nearly, but not quite right (must be my age) - its £143.32 so far this month. Two weeks to go though, but still loads of stuff in the freezer.

    Roast Chicken Dinner with all the trimmings tonight, and I know there will be LOs for Some Chicken Fried Rice either tomorrow or Friday.

    PS Had a letter from NS&I saying that an old investment account i've got is going to to be a postal account from now on - so going to close it and split the money between Mortgage and Savings - there is only about £30 in there I think; but its better out of there so it can be used rather than sitting there forever earning 0.01p interest a year!
