Potato pancakes. Grate Raw potato and squeeze out as much liquid as possible, add salt, pepper, and egg and a tablespoon or two of plain flour. Fry in flattened spoonfuls in shallow hot oil until crispy and turn to cook other side. Great with baked beans or a bean casserole.

    Regards

Can you not cover them in salted water and use them tomorrow?

Raw potatoes go black if they are frozen, you could boil them for a couple of minutes, just bring them to the boil and they will be OK to freeze them

Why not cook them with the rest and keep them to fry up with bacon ,eggs and mushrooms maybe some beans and crusty bread. This is why I'm the size of a house

I'd be tempted to make lots of soup and freeze that. I must admit, I've never frozen mash. Can you freeze roasties?
The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.
