Slice and fry them, then chuck a couple of beaten eggs over the top to finish. Our favourite when we were kids. Yummy, I could just eat some right now.0

I always use cooked potatoes for dauphinoise and very yummy they are too. I haven't used just milk but I have thinned down half-fat creme fraiche with milk often and it works fine. I suppose it depends on what else you're planning to eat.0

ooh - I ALWAYS do more potatoes than I need because I love to have cooked potatoes on hand! my fave 'leftover' dishes are:
potatoes au gratin - cooked potatoes sliced thickly (quarter inch or so) into a buttered oven proof dish and then cheese sauce poured over them and topped with breadcrumbs/cheese then baked until the top is nice and brown and crispy.
saute potatoes (or sooty potatoes as dd used to call them) just quartered and deep fryed until crisp and golden (I like to grate parmegiano over mine just before serving).
fishcakes - use any cooked fish (tinned is fine if well drained) crush the potatoes (or mash them if preferred) and add your fish, some finely chopped spring onions, pepper and a little salt and then you can either fry them as is - or coat them in flour egg and breadcrumbs and then fry.
potato salad - add about a tablespoon of finely grated onion to about a pound of cooked potato, mayo, salad cream and either finely chopped chives or chopped fresh herbs. salt and black pepper to taste. and top off with crispy bacon bits!
gnochi - work into the mashed potato a couple of tablespoons of flour, some black pepper, and form into small balls - chuck into boiling water and when the rise to the top they are done! delicious with ANY pasta sauce!0 -
you could add them to an omelete to pack out.

if you don't want to eat them now, mash them and freeze. When they're fully defrosted they can look a bit watery, but just give them a good stir and they'll be fine.0

I think schools should have lessons on OS living and the benefits, whether it is because i am older but i wish i had have been told stuff when i was younger but in the 1980's it was buy buy buy and credit cards was your best friend. I watched a programme on tv recently about the introduction of credit cards and how a select group of people were chosen to have them, some returned them chopped up because they did'nt like the idea but then due to a glamourous ad campaign people went mad and applied for credit cards, i well and truly know credit cards are not the answer good old money is the way forward. Thankfully my kids don't want credit cards if they don't have the money they wait until they do, if only i had been like that i would'nt be in the mess i am right now.:j Debtfree and and staying that way.:j3-6 month emergency fund, No.61 £140.000
