I love Cheese, Potato, Onion & Tomato Pie. Just make mashed potato, fry some red onion in a fying pan and then mix with the mash and the grated cheese. Top with sliced Tomato and more grated cheese and pop in the oven for a while (or under the grill if the mash is still hot). Comfort food at it's best and my kids love it too.I want to be credit card and loan free by Christmas 20100

Hi everyone,
We have just been given a massive sackful of potatoes and I'd like to know if anyone has any good recipes that use up loads of potatoes. We had a free sack last year and I'm ashamed to admit it but lots went to waste, not very ms:(
I was making things like shepards pie, jacket potatoes, sausage (and lots of other things) with mash etc, but that's about as far as my creativity goes! Because of my lack of recipe ideas we ended up only using them a few times a week which ment that by the time we'd got half way through the bag they had started to all grow their little sprouty bits :rotfl: Now, normally I pull these off and use them but they were way out of control and there was no saving them.
I'm hoping that this year we can save some money by having potato based meals as much as possible!

Hiya, I would stop buying frozen chips and make your own. A bit like roast potatoes. Cut wedges or chips, coat in cooking oil and in the oven they go.If winter comes, can spring be far behind?

gratin dauphinois is a nice (and luxurious) variation intead of mash as a side dish. I'm sure I have seen a recipe on here for a cheesy potato bake as well. Bombay potatoes/sag aloo/chilli fried potatoes for curries.
I often vary shepherds pie by using chilli con carne or keema curry mince as the base instead of always doing 'English' savoury mince. HTH0 -
you can mash them & freeze them in individual or family sized portions or you can mash them with a yolk of an egg and form into little nests (like duchesse potatoes) & freeze. Then to bake in the oven - no defrosting required.
Turn them into leek & potato soup - again can be frozen.
Mix with fish to make fishcakes or with flour & seasoning to makes potato scones.

I haven't tried the lemon - but hope to do so soon and the chocolate cake is very moist, you can use it as a pudding0 -
cheese and potato pie - can freeze it if you want
potato rosti - doesnt use up much potato tho
potato soup - nice with the addition of leek
corned beef hash
bombay potato (potato with a dry curry)
duchesse potatoes (mash creamed with butter and piped or piled onto baking tray and baked in hot oven for half hour or so)
cheesy potato bake - sliced potatoes covered in cheese sauce and baked in hot oven (i parboil mine first)
add to any stew!
add to veg curry - surprisingly good!0
