I don't know if this will be of any use but I do a chicken, bacon and onion potato hot pot.
Dice loads of spuds, chicken, bacon and onion. Add some chopped garlic (assuming kids will eat this!) and drizzle in a little olive oil and cook until tender. For boosting nutritional levels you could bung in any other veg, courgettes work well. With the garlic it's a tasty dish.I have a gift for enraging people, but if I ever bore you it'll be with a knifeLouise Brooks

Do you put any stock in? This sounds really nice but how would the potatoes cook?:cool: DFW Nerd Club member 023...DFD 9.2.2007 :cool::heartpuls married 21 6 08 :A Angel babies' birth dates 3.10.08 * 4.3.11 * 11.11.11 * 17.3.12 * 2.7.12 :heart2: My live baby's birth date 22 7 09 :heart2: I'm due another baby at the end of July 2014! :j

You might something in the How many things can you do with potatoes thread, and there are loads of potato threads listed under 'Vegetables' in the Complete Cooking Collection (bottom of post #8)
I did a search for 'potatoes' too - go to Advanced search and 'search titles only' and I got about 80 results so may be worth a browse. HTH... don't throw the string away. You always need string!

No I don't add any stock. I bake this in the oven and before I add the other ingredients I drizzle over the olive oil and mix it round the spuds. Plus the fat from any chicken and bacon helps coat the spuds too. I just give it a good stir in the pot halfway through cooking so stuff doesn't stick too much.I have a gift for enraging people, but if I ever bore you it'll be with a knifeLouise Brooks
