How lovely it will be for your FIL to have all his family, including such a newbie, celebrating. We took DS to Portugal when he was 10 weeks old (with DD1 aged 4 and DD2 aged 2 in tow) to stay with my parents who had rented a house in the Algarve for 5 weeks (we only went for two of them). I had had a c-section with him as well.
It was brilliant. I got lots of rest as there were plenty of willing arms to hold DS, he got lots of fresh air (although always in the shade) and he started going through the night while we were out there. Tiny babies are very portable. Just make sure you feed him on take off and landing, take your own milk if bottle feeding and make it up with the recommended bottled water (we were always told Evian has less minerals etc.).
Also just check with the airline as to what age LO is allowed to fly at - if he arrives a bit late there is a possibility he could be too young to fly (remember an episode of Airline with a Scottish woman in tears as her baby was a day too young to fly with Easyjet).
Above all, have a wonderful time. I cannot think of a better way to recuperate a few weeks after giving birth than a holiday in the sun with lots of helpers0
