    slightly off topic, but I love a little pease pudding mixed with horseradish sauce and stuffed in a trout. Sounds iffy but it's LOVELY!!

    Sallyrsm - funny enough I have two very freesh trout OH caught in the freezer - might have to try that stuffing it does actually sounds yum.

    Mmmmm Pease Pudding, gammon, mash and carrots! One of my faves and a big winter meal for my family. Not sure about it being a Northern thing though as my lot are from the East End and they've been having it ever since Nan can remember (and she's 70).

    I often used to make pease pudding - as has been said if you have bacon/ham stock from boiling a ham shank or gammon joint this will make the tastiest pease pudding, If this is the case it is really lovely with the addition of some small bits of the said meat stirred in before it sets.

    Back to how to make it - Place split peas in a fairly large saucepan and cover with water so that the water comes about 1" above the peas. (If you have stock subsitute for the water) Bring to the boil - the water will rise dramatically inthe pan, make sure that you skim off any scum that rises to the top and turn down the heat. Simmer until the peas are soft and disintegrating about an hour though it can be slightly more or less. At this stage beat in a large knob of butter, and season with salt and pepper. If you used stock you may not need any salt, but if you used water you will need to be generous with the salt. Just keep tasting as you go and when it is as you like it stop. Leave to cool and it will set.
    The BEST sandwich ever came from Lincoln's butchers in Horden Co.Durham.

    A Lincoln's special

    Roast pork
    Crackling
    Fried onions
    Sausagemeat stuffing
    and Pease pudding

    This sounds fab, my fave was from Ibbitsons in Sunderland, they used:
    Roast pork
    Crackling
    Sage and onion Stuffing
    Pease Pudding and the top of the bun dipped in gravy.:T

    lil_me,what do you mean the first time?!
    I make pea and ham soup regularly,and each time am caught unawares,they boil dry OR over AND stick on the bottom of pan.!
    DH does love it so I keep going.
