Jam one is not sensitive enough. you have to have a fast working thermometre and it has to be precise quickly, to within a half degree depending on what chocolate your tempering.I put a bit on blog about it. HTH

not done much crafty, or been on here much lately, have had a really bad dose fo the flu, im now left with a horrendous cough that is lasting on average for 10 weeks
just before i got the flu, the nursery asked if i would sew all the donated 'squares' into a blanket.... i tried.. it was a disaster! the 'squares' where not the same size, the colours didnt 'go' so i ripped it all out and decided to make blocks for babys to play with (they are being donated to an orphanage in romania)
they are not perfect but they will do.
